Everyone has her own recipe, so it's just for people to do whatever works for them but don't condemn other people's creativity, there's nothing wrong with frying fresh peppers or mixing it with a bit of tomatoes to cook egusi, same as there's nothing wrong with frying your egusi with palm oil but it's not everyone that likes frying egusi , some prefer cooking it normal and natural and it will still taste better than the ones they fry. So Everyone does what works for them✌️

I always fry my egusi with iru and crayfish before adding the pepper and other items. I guess I will try this way to see which I like better. I think my mum makes it the way you did.

How long does it take to final cook cow leg because it's not soft like other meat.

Cow leg depends, cook it separately from other meats because it takes a bit longer. I usually cut a little piece out to taste so I can know how soft it is. But don't let it cook for too long because it is still going to cook when you add it to your stew and also when you reheat it.

Among all the Egusi recipes I have come across online yours seems to be the best but you made a mistake in your stock fish You're suppose to boil hot water and soak the stock fish inside. Otherwise you're the best.
