I tried this and it came out quite good even though I don't have a wok. The secret really is in frying the rice and not just adding rice as I had done in the past. Thank you.

Yes. Frying the rice creates 'wok hei', which means wok aroma as a result of the heat. Try to fry in small batches if your stove is small.

I searched for a fried rice recipe and finally found yours. Very happy to learn from an expert. So many other recipes recommended butter, some even sugar. Most wanted spring onions sautéed. I learned from Uncle Roger that chili jam was not to be used in fried rice. I made steamed rice last night and letting it sit for cooking tonight. The only departure from your recipe is I’m including flash fried Brussels sprout leaves at the end. Or maybe I’ll serve them in the side.

I have found its best to scramble the egg separately in a non stick pan, (need virtually no oil) Then once the rice is ready throw in the egg.... Otherwise you get egg sticking to the wok and then find yourself scratching bits of egg off the bottom....

+Adrian Leo obviously you are ignorant about rice! There is a technique to making different rice dishes, and many different fried rice recipes and it is Not as simple as you'd think! I guess you're not fussy about taste or texture in your rice dishes!

the reality is all these exist because for the most part native chinese folks are treated like bugs by their society, limited everything, and through thousands of years of tyranny they learned how to cook whatever they could find, that they didnt eat raw and alive cause they were starving, very very very well and tasty.

Sylvia S. Brown rice isn't as good as cal rose rice... Not unless you buy the Japanese brand of brown rice which is expensive but it's as good as white rice..

Nice. There is the hack at home if you dont have wok. The Gold over Silver method for the rice. That is, mix egg into the cold rice before you cook it. It works fine.

@@TasteofAsianFood You will need a large and deep bowl. i) Put chives. ii) Cook a mirror egg and put it in the bowl, the egg yolk facing down the base of the bowl. iii) Cook a chop-suey with chicken, baby maize, bamboo shoots, mushroom, carrots, bakchoy and so on. You can add shrimp, bell pepper and other ingredients that you like. The most difficult part is the sauce that shoud be liquid. Put the chopsuey in the bowl. iv) Fill the bowl with steamed rice. Gently tap the rice gently as you fill the cup. v) Cover the bowl with a plate, rotate it upside down, 180¤ vi) Remove the bowl, here comes the magical moment.

The best way I have found to get restaurant style fried rice is to use leftover rice or rice that has sat in the refrigerator for at least half a day. When you use fresh rice or warm rice, it just gets mushy and turns into paste.

yep- avoid insta rice and short grain rice for this, although ironically brown rice does work, if your aiming for mall food court fried rice use a normal long grain white rice, cooked the day before and dried passively in the fridge or infront of hvac register.
