I just followed another bucket hat tutorial made the whole thing in a day and it was WAY to huge! Each square had 5 rounds. I have more confidence in this since its only 4 rounds!

THANKS SO MUCH for this tutorial! Perhaps it’s just me, but I found it much easier to attach the top granny square by making just 4 squares instead of 5 for the circumference of the head. You could do a pentagon for the top of the hat. It makes it easier to match sides.

You should make the top square with five point. Making the center 15 double crochet. Instead of the 12 double crochet if using five square .

You cannot knit a granny square as it is a unique thing to crochet. If you wanted something similar I would just knit a simple square - maybe using the fair Isle method to make a pattern on the square and sew them together like how she did.
