Good Observations. Being disappointed in a good looking body, always wanting more, is called body dysmorphia is very common, and it's good that you've gotten over it. Very, very few people can keep abs all year around, and the rest of us try to get lean [and hungry] for summer, then 'relax' the rest of the year. BTW, most of the content producers, like Thurston, are very nice guys, and frequently will respond kindly and honestly to specific and respectful questions. How you respond to a bulk is unique to you and your individual genetics. In general, your body composition will evolve significantly between now and the next 2 - 5 years. One significant goal is to work smart and disciplined with "perfect" form to avoid injury. Don't go for speed or massive weights that may cause injury. Work on moderate increases with excellent control and form. Build a habit of stretching and warming up, because in 2 - 3 years, you won't be as flexible as you are now. Get someone to show you how to do squats and work your legs, without hurting your back - Not a gym Bro, but someone with a college education. Bad form will cause injury, and you'll lose your gains. But, good form, and good leg workouts can help serve as a 'warmup', especially as you try to gain weight. Working on larger muscles, such as back, traps, and shoulders will help build more fat. Consider calisthenics, as well as slow leg raises to help your core, which will work your abs.
