Oh my gosh, your ha noi pho is so different than what I thought of. We eat a lot of pho here in US and I don’t know If it’s is Saigon based but we eat with hoisin sauce (tương đen) and onion pickle (hành dấm). Never see garlic pickle or eating with the fried stick (dầu cháo quẩy) and especially the egg. Just wow! Love your clips btw.

@@WhatThePho One thing I learned from seeing Japanese eat their ramen that VNamese should be corrected when they eat their pho. The nose needs to be down in the bowl to suck in the aroma, the eating motion should be like slurping and the bowl should be deeper to have more broth and retain heat better.

pho was originated in northern viet nam. i think the majority of pho around the world were introduced by refugee which are mostly southerners. so pho in the US are mostly southern style.

My goodness, I must eat pho for lunch tomorrow, because I love it so much. I live in San Jose and here has the most Vietnamese people and restaurant in the US. All the pho here seem to be pretty standard. It comes with bean sprouts, basil, sliced chili and a slice of lime. I've never seen the garlic vinegar, but it looks so good. The pho noodle here doesn't look that white. I think the pho in Vietnam looks better.

During my IAEA consulting stint in Da Lat and Saigon ages ago, the main thing to remember at street Pho stands was to put four of those tiny stools together to support my European mass, and entertain my hosts by trying unsuccessfully to use chopsticks. Seriously, in six weeks there I didn't get hang of using that hellish invention. But Pho was delicious.

Thanks for sharing, just to say in Saigon you can still easily find good Pho restaurants with northern flavour (go D2, Tan Binh, D7, ...) and they do have garlic vinegar, will full of garlic (more than the one in the video :)). I remember this Pho Nho (the one in HTK iirc, there's one near the intersection which I've tried 7 or 8 years ago), though tbh not the big fan of it, maybe different taste ...

@@WhatThePho I am interested in health-promoting foods to increase the quality of life. I've never been to Vietnam but the Mother Nature blessed your country with plants and fruit of medicinal properties. I am from NJ and typing from FL where I would like to find Barbados cherry or acerola cherry. Native to the Caribbean, but growing in the Far East, too. This one has extraordinary vitamin C content biologically available, unlike the ascorbic acid, which people buy as a supplement that is not absorbed well. Would you be interested to find centenarian people in Vietnam and ask them what is their diet?
