Blanching is a quick cook that stops food from deteriorating (basically, going bad). It doesn't cook the food, it just stops the dying process. It's a preservation process. It's typically only done between 1-3 minutes, depending on how fragile or tough the food item is. If it's broccoli, you could only blanch it 1 minute to keep that crisp-tenderness once you actually cook it, which should only take another 1-2 mins in boiling water, or approx. 5 minutes steaming. Carrots would take a little bit longer. Leafy greens would be just an instant dunk into the boiling water, like 15-30 seconds, not even a minute. Always, always, always, dunk your blanched veggies in ice water to stop the cooking process. This process brings out their color, along with preserving the vitamins and minerals they have.

oh my, if you take the broccoli directly from the water and into the freezer bag, you are going to end up with one frozen chunk of broccoli. the water will cause all the pieces to freeze in one hunk. i would suggest letting the broccoli dry, placing on a cookie sheet (lined with parchment, wax paper or a mat) and freeze solid. Then you can put the pieces into a freezer bag and they won't stick nor will they have a coating of ice on them as the method shown in this video will cause. but if you want a hunk o broccoli that's your prerogative!

If you are freezing in bulk yes, but if frozen in portions it won't really matter if it all sticks together

I would never re-use blanching water because of bugs or pests that could float to the top. Throw it out and use fresh water.

This is cooked broccoli leaving much of the nutrition in the boiled water. For freezing it's best to blanch (1 minute dip in boiling water before going to cold), or better yet, steam or saute in minimal water, for 3 minutes and eat directly. Even steaming raw broccoli for veggie tray, just for a minute to set the color and enhance the nutrition, is recommended these days.
