Driving Under Influence offence is classed as a criminal offence, and will be recorded on the individual’s police record. If you have a criminal conviction for a 'prescribed offence' within the last 10 years, your security guard license application might get refused

You need to be in Australia for more then 12 months to get a security guard license. So if you are living in Australia on a working holiday visa for more than 12 months then I think you can get security license

You can apply to have your security licence mutually recognised in NSW by filling out the P608 Mutual Recognition application form and posting it to SLED. Individuals who hold an interstate security licence may apply for the equivalent NSW licence in accordance with the requirements of the Commonwealth Mutual Recognition legislation. SLAD IS Security Licensing & Enforcement Directorate NSW Police Public Site. SLED will contact the interstate licensing body to verify the statements or information provided in the application.

I am quite sure you can, when you apply for a license and they might ask you that what would you do in the future that drive offence doesn’t happen again, just tell them that you will make sure that you will follow the traffic laws very strictly and will make sure that you will never break rules again

You have to do the course again as it is valid for only 12 months. Once the course is completed, certificates are valid for 12 months. If you have undertaken a security course more than 12 months ago and find your training to be out of date, or if some units in your current training are no longer relevant, then there may be a credit transfer available for those Units.
