Simple and easy weeknight dinner recipe for berbere lamb loin chops on the Kamado Joe grill.
Full recipe:
Marinate lamb loin chops for at least 1 hour up to overnight in extra virgin olive oil, kosher salt, fresh cracked pepper and liberal berbere seasoning.
Heat grill to 400 degrees or medium high heat.
Grill chops 6-10 minutes, 3 mins/side to start, and check for internal temp of 130. Flip every minute after 6 minutes to avoid burning or excess charring.
For thicker cuts, "temper" or stand chops on the bone in a cooler part of the grill while it warms up to bring them to temperature more evenly.
Rest five minutes and serve.
