I just finished installing four post column wraps on my pergola. The product is easy to install for a DIY project. I used Loctite 500 masonry adhesive. I am happy with the product. I would note that if you are super picky about appearance then you'd be better off hiring a mason to install custom wraps. This is cast colored concrete and has some flaws when examined close-up.

If the column is bumped into wouldn’t the rock have a chance to move as it’s not backed by anything?

Maybe fill the void with concrete or pea gravel. As long as water stays out and can't freeze and expand.
