I love how you just figure it out! It's the way I did things on my homestead....my husband thought I was NUTS (built 3 decks and a mudroom in the last two months of my pregnancy, finished porch/mudroom Friday at noon & had my Son Saturday at 10am lol)! Necessity was my motivator!

The best way I have found to cut the plastic roof is with a metal saw blade on a skilsaw.

I suspect the venting is part of a heat mitigation system. Where is the fan/motor and how many CFM are you requiring, given the space involved?

Jason, how are the vents operated? In large commercial greenhouses, vents of that type are motorized to open and close... regulated by a thermostat.

How resistant is the plastic against hail?

Somewhat hardy. Will survive small hail. Golf size or larger would probably take damage it. Putting some small holed wire over plastic would help with larger hail.
