5:07 That's not "damage", it's because you didn't fully dry it before putting it in the jar. If properly done, I am interested if it may go for a whole month.

I was always taught to never cut your lettuce. Always tear it up.. ( this keeps the lettuce from rusting) Also leftover dry salad can be placed in a paper bag alone, not in plastic wrapper... roll top of bag down tight. poke a few holes in bag with a toothpick... place in the vegetable drawer of your refrigerator and will stay crisp and fresh for up to 2 weeks. ( depending on the temperature of your refrigerator)

I've used my FoodSaver to store lettuce many times. Keeps it fresh for at least 2 weeks. Normally I cut the lettuce into quarters and put it either in one of their gallon zip lock bags or a container. Lettuce will continue to decompose after that 2 week period when refrigerated, so keep an eye on it.

I have had a Food Saver for years but never thought about using it for lettuce. I will now though. I have 1 gallon jars which will probably solve the packing too tight issue. Thanks for the tip!

Make sure you sanitize all your jars as if you were canning. Also make sure all food is sanitized as well before adding to jars. Once vacuumed packed all stuff adding to jars or already on stuff before added will determine how product stays fresh. Or doesn't stay fresh.

With Romain it best to wash the full stalks and paper towel dry the individual stalks prior to cutting

To avoid lettuce to turn brown, you can use a plastic knife for lettuce. Sound weird, but it's design it for, so it's work well. The metal when it's touch de lettuce create oxidation process and that why our lettuce turn brown.

The brown is from the knife perhaps? If you use one of those coated knives for vegetables perhaps even the control wouldn’t brown as much.

Maybe you could use vinegar in water to clean lettuce first. Then drain use spinner. Then lay out all lettuce single layer on top of a raised open grid sheet so air can completely move around lettuce to dry all lettuce. After dried completely place in clean sanitized jar and then vacuum seal

I worked in a restaurant years ago and we were not allowed to cut the lettuce only tear it.

I ate salad sealed one and half weeks old which caused me bad stomach pain. Dont suggest you eat any vegi, even sealed, longer than one week.

Was the jar cleaned well and Sanitized before sealing the jar? I would think when your vacuum sealing, your vacuum sealing also what is on inside of jar before your adding food

Ceramic knives are the way to go when cutting fruits and vegetables rather than metal.

I picked up a glass knife years ago at a flea market- that’s what I’ve used it for, no brown edges-- keep it in a stiff canvas sheath-
