How to Make a Chicken & Spinach Curry | Mum's Recipe | Cooking in Pakistan With Chef Hussain
If you love original, simple Pakistani cuisine, you're in the right place. As part of our origins series, I visited my ancestor's village Jallo Chak, which is near the city of Dina in the district of Jhelum.
My family have lived in the village for generations, starting with my great grandfather, who moved there over 150 years ago.
My ancestors were farmers and local hotel owners that served meals, so food has always been a part of my family life when I was growing up.
I caught up with everyone from the village (I hadn't been back since 2016) and spent some well-needed time with my family.
It was nice to see all the community changes, more hospitality, good food, and culture growth; it’s a cool, calm place, lots of greenery, fields away from the city's hustle and bustle.
🍛 What is chicken curry?
Chicken curry is a dish that originates from the Indian subcontinent and is popular across South East Asia, the Caribbean and the UK. While there are many variations across the world, a traditional Indian chicken curry will contain ingredients like tomatoes, onion, ginger, garlic, chilli peppers, tomato puree and various spices. Chicken curries are regional, and you can expect to see variations in different places.
🥗 Is chicken curry healthy?
It all depends on what you put into your curry, but if you keep it simple and use quality ingredients, there's no reason to think your curry is unhealthy. As I explain in the video, you can use less oil or drain excess oil.
🥘 Equipment:
-clay cooking pot or a round casserole dish
-wooden spoon
-knife and chopping board
🛒 Ingredients:
-7-9 tbsp veg oil (to sautee onions). Use 2-3 to sweat onions
-2 medium onions, sliced
-1 tsp salt
-1 tsp whole cumin
-1 tsp garlic
-1 tsp ginger
-250g chicken
-2 medium tomatoes, chopped
-1 tsp turmeric powder
-1 1/2 tsp coriander powder
-2 tsp chilli powder
-2/3 handfuls of spinach
-2 green chillies
-2 pinches of fenugreek leaves
-1 tsp garam masala
-chopped coriander for dish and garnish.
📖 Recipe:
1. Chop all your veg and meat
2. heat up your clay pot and add your oil
3. wait for the oil to heat up and add your onions
4. add a tsp of salt to take the moisture from the onions and add flavour
5. while you're waiting for the onions to brown, add your whole cumin, garlic and ginger
6. give it all a stir and watch it brown
7. when your onions have caramelised, add your chicken and give it a stir
8. add your tomatoes and stir them in
9. time to add your spices, turmeric, coriander powder and chilli
10. add your spinach and let it wilt, and leave to simmer for five minutes
11. add your green chillies and crush the fenugreek leaves while adding to release their aroma
12. add your garam masala and a pinch of coriander
13. plate up your dish, garnish with coriander and enjoy with chapati, naan or pitta bread
