In case newbies don’t know, the oils in the orange, or lemon skins, contain the oils that release their beautiful flavor when grated. Soooooo good! Put the peels in a bottle with vodka😅 and make your own extract. Never, never throw away the skins!! As an,old Italian remedy for headaches, my grandpa would heat the skins on the kerosene stove and rub his forehead!! Go figure!

I just thought a bit of your grandfather's inspiration. Many energy channels called meridiens run through the forehead, among them, the stomach (if I remember). And the chinese have a remedy for some stomach problem, mandarine's peels in decoction. This is awesome how all knowledge joins in reality. And many thanks for the tip 👍 ☀️

Hi Chef Jean-Pierre Today was the birthday of my mom. She is 87 and she lives in a retirement home. Yesterday i did this WONDERFUL, AMAZING AND SOOO TASTY cheese cake. I went to the retirement home where she lives and many of her friends was there and now they are thinking that my mom give birth to God. Everyones loves it so much... It was an amazing evening and it is in this moment that you understand that food can bring people together and make them happy. ( and you know how to do it) It was an unforgettable moment to see all their faces. Thank you so much Chef!!!! You are a real one! I can’t tell you how much I love when chef gets excited and kind of flaps his hands. It’s very endearing and it shows how passionate he is. It’s like little kid energy. He is so excited to cut into the cake it makes me excited to rush out and bake it so I can try it! His food is what brought us here but his personality is what keeps us here!! Never change Chef!! Anyone that hates on you can change the channel. (You know what I mean 😜😂) don’t let them get you down. Then they accomplished their goal. Just forget them immediately. I usually make a new recipe once before I make it for guests, so I was a little nervous doing this for the Christmas crowd, but it came out beautifully. What I like - admire - about you, Jean Pierre - you are not afraid to tackle any culinary task. So many Chefs today shy away from pastry. I'm like you. Years ago, when the opportunity presented itself, I dug into pastry like crazy! Tarts, cakes, flourless cake, strudel, bread pudding, Ice cream, sorbets, Gelato, and, yes, cheesecake! Many, many variations of cheesecakes! A cook who can handle preparing the entire meal - from canapés, to soup, to entree, to dessert - that is a true Chef!

I have made this recipe for many years and absolutely love it. It was first printed in a special recipe booklet attached to a Kahlua bottle. The only difference is your use of fresh orange zest, vanilla salt and ganache. But I love those enhancements. I have always lightly brushed the top with a bit of Kahlua and decorated with dark chocolate leaves, for an added layer of texture. But now I may also try adding a bit of fine ground hazel nuts on top as well. Chef, you've re-awakened my joy in baking by your infectious nature. Thank you!

Chef, I made this for Christmas. I hope you don’t mind because it wasn’t Thanksgiving. In the video you show cooking the cheesecake at 350° yet in the printed instructions it says 325°. I am guessing 350° is correct because I baked mine at 325° and it took a lot longer. All in all this is one hell of a good cheesecake and this is coming from a guy that makes cheesecakes all the time. I received nothing but compliments tonight. Thank you thank you 🙏
