My wife and I played around with your recipe and came up with this. 2 Plantation 3-Stars, 2 Dole pineapple juice, 1 Coco Lopez, 1/4 Lime Juice, 1/8 Giffard Orgeat. The lime adds a touch of tartness to the pineapple and the orgeat adds a subtle nuttiness to the coconut. I plan to try some other rums with this but we're very pleased with the results so far.

Since Coco Lopez or Coco Real isn't available everywhere and, like you say, it's more expensive than its base components, I suggest making your own. It's super, super easy. Just combine a can of unsweetened coconut cream with the same amount of simple syrup (1:1 water and granulated sugar) and a pinch of salt (1 teaspoon). For service, it's much easier to use because it pours easily and doesn't get stuck in the jigger. It's inexpensive. It's delicious. It has no additional additives so you know what's in it. Win Win Win.

I bought Coco Lopez for the first time the other day, because the liquor store didn't have Real brand, which is what I usually use. I guess it's OK, although I cut my finger on the damn can. The Painkiller is my usual tiki drink, but if I don't have OJ I make a Pina Colada instead. The rum I usually use is Mount Gay. I like your proportions here. I typically use 3oz of pineapple juice instead, but that's mostly because it's half a can so it works out well for making it at home without "extra" pineapple juice to keep around. I guess I could still use equal amounts of rum, but that leaves the coconut cream a bit approximate.

Behind the camera Josh here. My daughters and I made what we dubbed a "Beach at Sunset" by making this without rum then floated cranberry juice on top (basically using up the left over ingredients!). The sweetness & tartness was a fun combination, and it looked pretty cool, but not sure if you're thinking for kids or for yourself. Cara might have some advice on something a little more balanced.
@BehindtheBar4 жыл бұрын
I definitely agree with Josh, this one is a great one to literally just leave out the rum and add either cranberry or something like lime to give it an extra bit of bite. Tiki drinks in general are good for that as they are quite fruity and forgiving - a favourite at the bar is equal parts pineapple and grapefruit juice (90ml), 20ml orgeat and 30ml lime. But it’s definitely a good episode idea!

why does the coco lopez look like its the oil on the bottom of the can? in other vids it's white like it should be and i would def not warm it as a bartender, you need to keep it cold and then mix it well before using
@BehindtheBar3 жыл бұрын
Have you ever used Coco Lopez or something similar? Coconut oil is solid at room temperature, so it often separates. Warming does nothing to it other than make it easier to mix through (I’m not talking about actual heating here!), and of course shaking it brings it back down to the desired temperature while emulsifying- just a wee hack I picked up while churning out hundreds of Pina Coladas a week 😊
@ARCSTREAMS3 жыл бұрын
@@BehindtheBar yes i know coconut oil is typically solid at room temp and in the summer its liquid but this is suppose to be a cream of coconut and is more soft even when solid its easy to mix so it does not separate into oil and solid fat ,looked like you only used the oil part instead of remixing it properly as it should be like white milk
@BehindtheBar3 жыл бұрын
@@ARCSTREAMS I mean I’m not sure what to say haha, we filmed in the middle of winter so it was separated, and I did mix it through (Coco Lopez is sort of a pearlescent creamy white, not a pure milky white).
