I genuinely am in shock at how good this recipe is. I was really nervous as I was making it, because the method is totally different from what I'm used to and it smells honestly REALLY BAD before it's baked, but the texture and taste are absolutely perfect. I’m in the process of making this cake, I am rock when it comes to baking, and have literally only made one cake before. I would recommend you spend a little more time with pan sizes as, I only had three 8x11/2” baking pans & I was really hoping to make this three layers tall, but that’s okay, I’ve definitely learned something here. I’ll be back Christmas day to post my review for the finished product.❤️

After watching dozens of videos and failing red velvet cake I finally nailed it using your recipe...it was sooo light, super soft & delicious. The only thing I done differently was I used castor sugar instead of granulated & reduced the amount by about half a cup cz I was scared it will be too sweet however everything else I followed your method. Idk about the oil, It may change the flavor; but I think you can substitute but baking powder will Make it rise up, so if you want if flat no good idea...

You are correct, red velvet is not just chocolate cake with red food coloring like you so often see. It is reversed cream like you did. But you missed the most important element of a true red velvet cake, it has red dutch cocoa in it, like red brute, roland or guittard, which gives it it's classic red color. It of course has the buttermilk and vinegar to neutralize the bitterness in red dutch cocoa. Anyway, you are far closer to a true red velvet cake than most people post.

Hi , I have tried this recipe twice and both times tasted awesome . First time : is there a specific color type that one must use ....I used gel food color however what happened was that the sides of the cake seemed to have the cocoa powder color though inside was this lovely deep color .what do you think could have gone wrong . 2 .second time ..the same.issue with color .however I totally forgot adding the butter ..by the time I realised this ..the cake was in the tin and in the oven ..and crust had started to form so i couldn't add ..fingers crossed ..and was very sure I'd have to do this again ...but but but but evn with no butter ...this cake turned out super awesome ... So my only issue remains with the sides being brown ....help help help

There are over 500 comments, but neat fact, the vinegar, buttermilk and cocoa will cause a chemical reaction and turn red. It will not be bright red without food coloring. Check the ingredients of your food coloring to make sure it doesnt inclide red 40. If you dont have buttermilk you can make some out of milk and lemon juice.

Hi Liz, can I use dutch cocoa for this recipe, or does it have to be regular? Also, it doesn't really specify in the blog post, so should I mix on my KitchenAid stand mixer for a full ONE minute on speed 4? (Usually when you say medium speed, you mention it's Speed 4 on the KA but I know it's mostly referring to the reverse creaming method, which is not the case here)
