That's the way my favorite but long-closed L.I. NY local takeout joint used to make it and it was the best damned fried rice I've ever had. Always dark colour smokey flavor, almost caramel-color rice, and bean sprouts which for me just helped make it. I think the family that owned it were from Shanghai, but not entirely sure.

1st time seeing you, I got it, it looks easy i will try it in the morning, let me put this on you, never, never, wash you pans with any kind of soap, boil them on the stove, and wipe them off with a damp rag, put them back on the heat until hot, add a little oil and put them away, nothing will stick, not even eggs, hey sister I,ll yell at you later, Lord be with you always BB

I totally agree with you about carrots- I’m not a big fan of them. I add them for color, sweetness, and nutrition. I’m like you, I ALWAYS shred them( unless it’s a soup). I’m going to make this for my daughter today- I am trying to wean her off of fast food to eat healthier, and lose some weight( she a teenager). Hopefully, her taste bud’s will change, and she’ll learn that cooking is satisfying, and cheaper. Love you and your channel- you are a blessing.♥️PS Gonna try your beef and broccoli dish next! Yum

I don't like egg in my fried rice either! Try using a little Oyster Sauce in your fried rice! It gives it a great flavor and that dark color you love!
