I’m Puerto Rican, in our country we use and make annatto oil to make what we call, “pasteles”. It’s basically mashed green plantains with a bunch of other root vegetables and squash wrapped in banana leaves and stuffed with meat. We also make them out of cassava so we get the option to choose between the banana or cassava version. It’s a traditional dish we cook and eat during the holidays. I love your channel so far, thank you for sharing your recipes. I’m learning a lot and see some resemblance to the foods we traditionally eat in PR just with other healthier ingredients.

Thanks for your contribution Jarenice. I have a lot of Puerto Rican friends whom I love dearly. Yes, our recipes are very similar. Some are basically the same lol. We eat a lot of rice too. I'm thinking of making a healthy version of Pasteles, but I don't want some Abuelas to turn in their graves (idiom) because of what may be considered a travesty 😅. I might just give it a shot. Thank you so much for the idea and by the way, Annatto (Achiote) Oil is the best thing that's happened to this channel 😍🥰

Puerto Rico, Cuba , Dominican Republic all those Latin places are heavily influenced by African Culture. We have to remember a lot of Africans were brought there hundreds of years ago for labor (slavery). Africans did so much for Latin culture. Im talking about Cumbia, Salsa, Mofongo, Samba, Bahia dress, Tango, Merengue, Tacu Tacu , Tapado, Punta, Bomba, Bachata roots are in African rhythms & also Africans played a part in the development of Flamenco. And so much more, so thats why alot of people say Spanish and African culture are so similar because a lot of it is influenced by African captives.

Annato oil is at the base of Puerto Rican cooking. That alongside the cooking base sofrito gets used in stews, rices, bean dishes. Also used in some of the fritters, and to make a dish called pasteles. At my house there was always a jar with annato oil laying around. My mom used to keep it inside the fridge.

Hmm... I didn't know that. I plan on making pasteles though. I love Puerto Rican cooking. It's very similar to African cooking. I'll keep it in the fridge and see how long it lasts. I make it all the time now. Thanks for dropping some knowledge 🙏🏿

I love your channel. I recently decided to venture off into the alkaline lifestyle. My body became increasingly intolerant to meats. After discovering how likely it is to get parasites from seafood I decided to choose a lifestyle of alkalinity as the way to get a healthier diet and better health. I do use annato seasoning but never in a homemade oil this way. I have some here but i will buy more and make a big jar like you did! Gracias. I just "met" the anchiote tree fruit on a tour this weekend here in the La Fortuna region of Costa Rica. With the avocado oil I have, I just have to find a lot of annatto pods to get the seeds. This is wonderful! I just found your channel & can't stop watching. Gracias again!.

Achiote oil is a staple in the Puerto Rican kitchen. I remember my mom making this when I was growing up. Fun Fact, it's a good mosquito repellent as well. Taino Indians used it on the island back in the day. Great channel. I love the videos I've watched so far!! keep it up. Will follow on instagram as well. Great video! 👍🏽 You could also make your own dry seasonings such as Sazon and Cajun seasonings by finely grinding the seeds and adding your choice of other dry blends (i.e garlic, onion powder, etc) to it.

I remember back in the 90s while growing up in the western part of Nigeria 🇳🇬, they use it in oil for newborns skins with what we call adi agbon! I was a kin observer as child😂. I use it daily for my kids' skincare products.

Thanks for specifying. Vegans have the choice of switching between palm oil and annatto oil. I use annatto oil for Alkaline Vegans because palm oil is not a recommended food for them. Note that palm oil should be eaten in moderation. If you're not a fan of palm oil, just use other healthier options. Thanks for watching from Cameroon 🇨🇲 🙏🏿 💪🏿

I'm Jamaican and familiar with annatto seeds. I've bought them whole and crushed them to use them as a coloring especially if I'm making yellow Spanish rice. We don't use the oil so much that's mostly I believe a Spanish thing . I would love to know how to use this oil in everyday dishes not just ethnic or eccentric cuisine

Hi, I'm feeling great! I've got oil in the bottle, so I can't measure the capacity right now. It's also not written underneath the bottle either. It's about 7.5 inches tall... if that helps. If it's ever empty and I remember, I'll check how many fluid ounces it can hold. I think it's one of the items I bought in Europe. A Mom and Pop store. I can't recall the name either 😆 🤦🏿

I noticed that you use metal utensils. Doesn't that scratch you pots and pans. Yay, I can't wait until you use it. I usually cook with the seeds. I make the oil, leave the seeds in and cook.

Yeah, I try (not always) to use stainless steel, ceramic, or cast iron pans and utensils when making Alkaline recipes. They're the approved utensils for that lifestyle. The utensils leave micro scratches, but I don't mind them at all. Yes! I'm really excited about Annatto Oil 🕺🏿

Hi Mary, Yeah, annatto oil is really good. I recently stumbled upon it too. There's so much we need to learn from the older generation. I never stored mine in the fridge. It's been stored at room temperature in a dark place (cabinet) for months without issues. Hope this helps.

Will this by any chance work with annato powder?

It will work, but you'll have a lot of sediments. You may have to use a nut milk bag to filter out the undissolved particles. Then again, you'd have to throw out the nut milk bag. Annatto is pretty much a dye and would permanently stain the bag. I would just cook the food and add the annatto powder as a dry ingredient. It still would give it some color and aroma.
