In this episode of In The Kitchen with Matt I will show you how to make Almond Roca. This homemade almond roca recipe is fairly easy to make with very few ingredients. Almond Roca is essentially an English Toffee that uses almonds, but they are very close to the same. And some people use the names interchangeably. This is a family favorite treat to have during the Holidays, if I can make it you can make it, let's get started!

Ingredients:
1 pound of butter (4 sticks) (450g)
1/3 cup of water (80mL)
2 Tbsp. of light corn syrup (40g)
2 cups of white granulated sugar (450g)
1 cup of almonds (I use 1/2 cup slivered and 1/2 cup roasted)
11.5 ounces of milk chocolate chips (or dark, semi-sweet) (330g)
Tools:
sheet pan (11x17 works great) (greased, I use butter)
spatula
large pot
oven mitts
butter knife

It was so well received that I ended up making 5 batches in 2021 for family, friends and close customers at my workplace! Either work great! I really like milk chocolate, so I regularly use that, but dark chocolate tastes great too. :) Or even semi-sweet.

omg i have to try this! but question, did you use a candy thermometer or just a regular one? idk if theres a difference

There is definitely a difference don't use a regular thermometer that you would put in your mouth to check your temperature. Definitely use a Candy thermometer or a meat thermometer. :)

Hi Rylan, no the butter isn't clarified and check your heat it shouldn't be burning at all.

Hi Matt, thanks for the great recipe! I have a question. your candy requires only 290° to be completed whereas the normal almond Roca candy recipe requires the temperature to be 300 and above. Is your candy softer than normal almond Roca?

Hi Debbie, no it is hard, 290 to 300 F is considered the hard crack stage. Don't go above that.

It is so good David! :) But yes unfortunately this one would be a bit harder with the wheelchair, unless you had a hot plate or something that you could use at the table.

Yup and this takes one pound of butter which is 2 cups. :) Or 450 to 454 grams.

If stored in an airtight container they will last a few weeks.

It should be stored in fridge or at room temperature

@@chocogracehandmadechocolat4024 Either is fine. :) It will last a little longer in the fridge. If your home is pretty warm room temperature, probably better to store in the fridge.

Hi Tere! No they aren't toasted, but you can easily toast them if you want. And the other chopped almonds that get sprinkled on top.

Hello Dedrie, the main reason toffee/almond roca turns out gritty/grainy is sugar crystals that develop on the side of the pan. Those need to be brushed down with hot water and a basting brush.

@@inthekitchenwithmatt an even more simple way to handle crystals is to take your first stick of butter and thoroughly butter the sides of your pan up to 1 inch from the top, then as you cook, the sugar naturally glides back down into the bubbly mix that is cooking. And voila!
