Thank you so much for watching! We wanted to clarify some misinformation we gave in the video - we stated that the "inner" skirt steak was more tender than the outer cut - this is not true - while tougher, both cuts offer "robust" flavor, as we found out in this cook!

I love and am addicted to y’all videos. Keep up the great work. Oooo next time cut the skirt steak the other way(really long strips and then cut those long strips into bite size pieces). That way cut cut against the grain and it’ll be WAY more tender. Yall r the best and yall’s friends r lucky to have y’all in their lives.

Thank you so much for watching! I’m sure some would love to have it so perfect!🤗 - one trick if you want it to run elsewhere, is to place washers und the pegs of the griddle itself. Not sure if it works the same for the Camp Chef, but may be worth a try! Good luck, hope this helps!😄😄

Another GREAT, FUN video! Nice job and looks tasty. My wife loves quesadillas so I'm going to have to try and make this for her. Question - I believe that Brett said that he has a 22" Blackstone at his place. I just bought one a few weeks ago and am learning to use it. Mine seems to get way too hot - even at the lowest setting. It will hit around 500 degrees in no time, even at the lowest setting. No way to do "low and slow". Have you experienced this with yours as well? I called Blackstone customer service and they said it was normal. How can that be? Is there any way to adjust the burners, regulator, etc. to keep the heat down a bit? THANKS!
@kissbrettdouglas4 жыл бұрын
Mark 02TJ Thank you for watching! Yes, I have the 22”, and it gets super hot! When I want to cook it “low and slow”, I just move it from the left/right center, and cook where it is cooler on the outsides. I find I crank my levels all the way down for most cooks... it helps me control the cook instead of the heat. I hope this helps! Let me know how else we can help!🤙🏻

@markhobbs82264 жыл бұрын
Quick Note - you chose to pre-slice the Skirt Steak by cutting in the same direction as the grain in the meat, you would have had a much more tender cut if you had cut the Skirt into 3 or 4 larger oieces in the same direction and the turned each 90 degrees and then sliced across the grain. Also, if you had seasoned and then cooked them to a medium rare doneness of about 125 degree cook. Then cross grain slice and if desired more done, reseason the cut strips and then place back on the hot driddle and cook for an additional minute or two. You will have a terrific quesadilla!
@waltwins4 жыл бұрын
Thank you so much! Honestly, while I knew to cut against the grain, once we started filming, I was in the mode to get the meat on! It was amazing, but absolutely agree with you - it would have been much better. Thank you again and take care Mark!🤙🤙

Thank you so much for watching - this is always kind of confusing to explain. We talked with Todd Toven about this, and it’s why he doesn’t explain exact temps. The way the griddle cooks, if it’s really hot in the middle, we take advantage of other areas to help control the cook. This may not answer the question, but it’s the best I’ve got!🤣🤣

When making steak Tacos Quesadilla, etc, you may want to chop the steak in mini pieces, versus strips as it may be harder to bite through.

The difference between the inner skirt steak and the outer is that the inner is the best part of that cut. ok well that's a big difference.
@waltwins3 жыл бұрын
Haha! Correct! We were a bit upset to learn the butcher had misinformed us. We wanted to get it right and in asking him, he told us the opposite. We’ve since learned about the inner skirt. Thank you so much for watching!🤙🤙🔥🔥

The butcher lied to you. The outside skirt is definitely more tender than inside.
@waltwins4 жыл бұрын
Yes! We were so bugged to find out! Honestly, for all the skirt steaks we’ve used, it was the first time I’d seen the label for inner skirt - the butcher came out and said it was more tender. It’s on me though, I should have done the research! Regardless, we are really glad the quesadilla turned out amazing. Thank you so much for watching!🤙🤙
@SonTerrific4 жыл бұрын
@@waltwinsI appreciate the reply. The inside is good if it's tenderized properly. Otherwise there's some tough veins that run through it as well as some silverskin in the center. The outside doesn't have as much, making it more tender. Of course, both cuts are great either way. The quesadilla looked great. I've been watching you two for a couple months now since I first heard of the blackstone. Just waiting for a home remodel to get done before making the purchase. I have a few videos saved from you ready to go for my first few meals. Keep up the great content.
