Hello everyone, in this video I am making an aubergine dip similar to the Persian style (mirza ghasemi) using leftover insides of the aubergines and courgettes, you can ofcourse use a whole aubergine. I place them on a tray with olive oil and grill them until blackened so that it gives the dish a smoky flavour similar to baba ghanush. I then shallow fry a garlic clove in olive oil and tomatoe puree and blend them all in a blender adding half a lemon juice, 1 tbs tahini and salt to taste. Its that easy hope you like it
