A tip for anyone heating up something delicate in the microwave: set the thing to HALF POWER. It'll take longer, but you'll run much less risk of burning or overcooking. :) Also, if you're going to do big gelatin project like this, you don't have to buy lots of little boxes. @@stevecochrane9059 Another thing; I've experimented with various types of mint flavorings/extracts and found myself nothing but frustrated by how tricky it is. Namely, I make my own ice cream and have never been able to create a chocolate mint that even tasted as good as a cheap store brand. And apparently it's not just me --creating the cool-but-smooth mint taste in most commercial brands must involve some trick, either one or two of the other ingredients in the mile-long list, or just knowing exact version of mint flavoring to use. There's a local (regional) small business ice cream maker here in Mobile, and all their flavors are hit-or-miss. They have the best chocolate chip cookie dough ice cream I've ever had, but their chocolate mint literally tastes like toothpaste, and I don't even know HOW they think their pistachio is right --somehow it tastes like cherry cough syrup!

I made this cake. I wanted to boost the flavor of the gelatin, so I replaced some of the plain Knox gelatin with lime and blue raspberry Jello (for color as well as flavor). About a half a box worth, so the color didn’t end up being too opaque. I also replaced the first amount of water with Baja Blast Mountain Dew (again for color and flavor). I used lime juice instead of lemon and backed off the amount a bit in order to add coconut flavoring. No need to add extra food coloring. It turned out to be a perfect shade of ocean blue and still transparent enough! :)

My hubs loves gelatin cakes. I use essential oils, such as sweet orange, mint, and lemon, as well as natural honey for sweetener to add flavor to them. They come out very tasty and do not smell of gelatin anymore. I think I will make a smaller version of this cake with a lonely island and a palm tree growing in the middle of it :) Thank you so much for sharing it with us, Emmy! ♥

I made one of these cakes for my birthday last week. It turned out to be mostly jelly and chocolate and not much cake. Use quality chocolate, don't be cheap. It took me about 2 1/2 days to make. I used 2 cake mixes, 2 packets of milk chocolate, half a packet of white chocolate, half a cup of cream and 1 1/2 litres of jelly. The jelly will be more of a gummy texture. If you aren't a fan of gummy jelly you won't like the cake very much. I bought aeroplane jelly and just added some more gelatine, worked well. I layered the jelly from deep blue to a light aqua so I had to do the separate layers about every 5-10 minutes which was time consuming, but worth it. It doesn't last long in the fridge without the mould. The jelly struggles to hold together because of gravity, it will start to split after several hours, so best to take it out and finish it off just before you serve it.

Doing one just as a volcano would be awesome, each slice would be more consistent Jelly V cake proportions. I wonder too if you made tiny fish shaped candies, poured in 1/2 of the gelatin mixture, let it set, then stick the candy fish in, then finish with the other half of gelatin then set. That would be super neat!

I think doing a flavoured pectin, made with some fruit juice or lemonade (that has as little colour to it as possible) and maybe adding a bit of sugar to it as well. I don’t know if you can get the pectin to be set enough to hold its shape and still have a pleasant texture though. And maybe change the cake flavour or at least make sure the sea and cake flavours compliment each other. I think adding a coral reef of tiny pieces of strawberries and raspberries divided into individual or small clusters of segments could be both tasty and look good. And the gelatine/pectin should persevere the fruit really well as well.
