I absolutely love your creations! I’m originally from S.W. Ontario. I now live in Michigan, USA. and always tune in to see what you’re up to. I’ve also watched you since your T.V. days. Your show was my favourite! In the perfect world, you eat dessert always first! Right?! When my three girls were little, they had bibs that stated that.

A fun thing to do is use little balloons to make chocolate bowls and spoon the mousse into bowls you can eat. Just dip your inflated balloons halfway into melted chocolate, let them cool on a baking sheet, then pop the balloons, leaving little bowls.

Tried that. The temperature of the chocolate blew the balloon apart and I had chocolate all over my kitchen, cabinets, counters, floor and on me. Won’t do that again.

I always like to pasteurise the eggs when I make a chocolate mousse I use the Bain-marie way

I have tried this recipe 3 times and the taste was so so soft and delicious. Contrary to Anna's advice about "skipping the espresso", I have to say it was the liquid ingredients (brandy and espresso) that make the texture to be so so so tender soft and delicious. So, I suggest to NOT skipping them.
