When your apple cider vinegar is ready, remove mother, and place it in nonreactive container, add your fresh apple cider vinegar ( not water!) to it just so it is covered, close it with a lid, and keep it in the fridge to preserve it. You can use it again when you decide to make apple cider vinegar again. Does not have to be right away. When you make vinegar, mother is added in second phase of vinegar making, after fermentation phase is over, and you have strained and removed apples. Then you add mother(SCOBY) and let it do its job. Mother (SCOBY) can be stored in a fridge up to a year.

You can do it again. To make sure you get a scoby you have to add a table spoon of honey and about 1/4 of a cup of good quality apple cider vinegar when adding water to apples when you are starting making vinegar. Hope you get that scoby ✨️

Or in the second stage, after you strain the apples? And, is it necessary to keep the apples totally submerged under water to prevent molding? Really like your content, by the way😊

Thanks 😊. I add honey and vinegar in first stage. It will jump start fermentation and will prevent mold. During fermentation apples will rise, the top layer will not be submerged, and that's why it is important to stir them at least once a day, more if you want to. But at least once a day stir them well. As fermentation continues, apples will drop. People rush through fermentation phase, most videos and websites say it takes only 10-14 days. Takes longer than that. The more complete first phase, the faster and mold free second phase will be, with a guaranteed scoby.

Using the SCOBY from the previous vinegar-making speeds up the process, but it is not necessary. You will have a SCOBY by the end of the process, no worries.

So I am not a big store bought AC vinegar fan so I am wondering what one would do with this vinegar? I would like to start taking this type of vinegar by mouth because i think its good for you but dont because i guess any store bought makes me gag. Why should i make this? I have tones of apples

Homemade vinegar tastes way better! Store bought made me gag too. Homemade vinegar looks even different . It has this sunny, glowing color. Do try! I take 1 tbsp with a glass of water every morning on an empty stomach , and same at night. Dr Eric Berg has a great explanatory video on acv. I included video card at the end of this video with a link to his video. Check it out. If anything, you can use apple cider vinegar in regular cooking. It is vinegar after all.

@mariawalker1686 Yes, you can use unripe apples to make apple cider vinegar. Ripe apples have more sugar than unripe apples, so you might need to add more sugar to unripe apples to make apple cider vinegar.
