I was very much looking forward to the outcome of your initial, airlocked, anaerobic ferment of apple-juice, which you subsequently exposed to air using an ACV inoculate. The results you evidence here are spectacular and serve to vindicate your professional method. Indeed, the acetic acid content of your ACV makes it akin to Braggs', which I very much doubt could have been achieved using the oft-toted jar of sugar-water/apples/open-to-air procedure. As so often on YT, there's a poor signal-to-noise ratio when it comes to delivering reliable information, so it's an absolute pleasure to witness your professionalism here. Best recipe for me. There is always learning from everybody. I make wine at home. Lot of carboys sitting here and there. I will pick up unpasteurized apple cider from store and jump in. Winter is in the corner finding organic unpasteurized apple cider will not be too hard. I have red star distillers yeast in the refrigerator. I do have organic apple cider with mother, which I take every day due to high A1C. Also I was looking for 5 % acidity level in the final product. All in all this recipe fits my project. Love all your videos and I am doing my best to watch all. I grew Red Nobel Grapes and after pressing them, started the vinegar process. After a month to my greatest surprise found a beautiful Mother at the bottom. There also seems to be a second Mother forming. I have strained my vinegar and want to start more, so my questions are...1st..Do I refrigerate my new vinegar? 2nd...Do I just add more juice, from the grapes I pressed, to the Mother and wait again, and would I add any sugar? Please continue making your videos..you are easy to listen to and I am learning a lot. Thanks and have a great day, everyday!

Very cool! You skipped the hard part and still got the reward! No, vinegar doesn't need to be refrigerated, but it does need to be protected from oxygen. Store it in a very full bottle with a very small neck. And, sure! Just add more grape juice to your mother, she'll keep you in delicious vinegar. Sounds like you've got all the sugar that you need right in those lovely grapes. I'm happy you're enjoying the videos--I'll make more!

I could use a mother mine didn’t turn out well my acv turned out fine but the mother is still very young and thing only had it fermenting for about a month and a half .. nowhere near 6 months.. those mothers look beautiful

Hi...This is the clearest demonstration of the ACV process so far...Thank you for sharing your expertise...I am a fermentation fanatic now, and my artisan sourdough bread is as good as anyone's...Hot relish not far behind (and a great combination of flavor served on top of sourdough rye!...This should top it all off perfectly!...hey, can I use a blob of sourdough starter stirred into water to substitute for the dry yeast?...thanks again.

John Bowman Thank you for recognizing quality, John! Seriously though, I do appreciate the kind words. Yes, you can use sourdough for starter, but it will die off too fast. The Champaign starter is more resistant to the high alcohol levels here.

Wash them, peel them, chop them and press the juice out. I am lucky that my local farm does these things for me because I don't have the tools. Perhaps there is another kind of juice that you can use?

In your other video about wine vinegar, you tell to pasteurize or put the wine vinegar into narrow necked bottles. I really don't understand what will happen if we don't? The acetobacter should stop fermenting when all the alcohol is transformed, right? Another question: why you don't specify to do the same (pasteurise or narrow necked bottles) for this apple cider vinegar? Last question: my apple cider (with alcohol) is fermenting to vinegar now (1st month done...). At 21degC room temperature, how long should it takes roughly to see the presence of a mother on top of it? Up to now, there's nothing. I did everything as your instructions.

It MAY take a couple of months. Be patient. It's worth it. Your later batches will be quicker once you get a good healthy mother. The bottle thing is not completely necessary but it is the best way to store live vinegar as in minimizes the surface area of the vinegar in contact with air and slows down the oxidation process as the vinegar begins to break down further.

I'm surprised if anyone sees things moving. That's only going to be before the cider goes acidic. That's when you can still get mold in your apples. Once they smell like alchol, no flies should be in that!!

Sure. Any kind of fermented fruit wine at about 9% ABV makes great vinegar!

I used a pH meter: amzn.to/2EDwolF Just take the old mother and put it in a vessel of preservative-free wine. It contains the acetobacters that will break down the alcohol into vinegar. It's not good for anything else. It's just a disk of cellulose and bacteria.

Carol Mckerracher The mother may not form for months. Vinegar is very slow. Stirring is a good way to ensure nothing forms on the surface.

Tiffany Taylor I've seen recipes for that Apple peel thing but I've never tried it. I would think it would be a battle against spoilage without a culture to get it started.

Tiffany Taylor I just chop apples add water and a half cup of sugar. I tie the mouth with a cotton cloth and rubber band . In a month after stirring daily I have Apple vinegar to strain out. Again I tie the mouth and lo and behold the mother begins to form on top. My query is when is it ready to wean away from Mummy? When can I put on a proper cork or lid on the mouth? Please reply.

cosmo ianiro The mother is a byproduct of the acetobacters' ferment. If the byproduct didn't form, I don't think the product (ACV) was created. Did your final liquid still taste alcoholic?

Sanna Kruger Yes, it's useful for lowering the initial pH, but you'll also need a kombucha SCOBY, to ensure you have the proper yeast and bacteria to make kombucha.

Megazone Music After you discard it you'll only be able to watch the garbage men take it away. But you should Save it to make the next batch. Just put it in a jar with some of the vinegar it made and seal it away from air.
