I want to say thank you for teaching me to cook. Thanks to your teaching methods, I may not be known as even a decent cook, but, when it comes to my Puerto Rican food, everyone wants more.

I like watching you cook. I'm 72 years old and I make this arroz con pollo in a similar way .Both My mother and I always washed our rice. It does taste differently. I also use very little salt when we use salted pork , ham, capers, tomato sauce and other products in our cooking.I also use "adobo" for the chicken a few hours before cooking.Anyway I enjoy watching you cooking and teaching us new ways of making our best dishes come together. !Buen provecho desde San Juan!

Thank you so much freakin rican! This was the first time I got to make arroz con pollo and I am so pleased with how it's turned out. I never got to learn my abuelita's way of preparing this dish and my cousin is the only one who knows really but she's never had time to show me. Now I can finally start making more spanish dishes and add my own style to them. Thanks so much!!

Hi Chef, we love your cooking channel, My wife is Peruvian and we eat many, many different Peruvian dishes. We are enjoying a lot of your recipes and they are rico. I was looking at your soffrito, it looks like either pesto or chimichurri, made with basil and parsley, and a few others. What is the basis of your soffrito, if you don't mind me asking. We are here in Lima, Peru right now, because of this virus thingie, we've here since Dec., the gov't here stopped international travels back in February, and we were scheduled home in April. Anyways, I love this arroz con Pollo dish you prepared today, and was wondering what could I use for our soffrito. Thank you have a great day, and see you in the kitchen..Chefbob

I know it’s Monday, April 8th, so it’s really late. I’m still hoping you can answer my question. Some arroz con pollo videos lightly pan fry the chicken to brown it and leave some yummy browned stuck on chicken fat residue at the bottom of the pan, then setting the chicken aside and replacing the chicken with the veggies to deglaze and pick up the browned bits for more flavoring. But other videos, including your’s don’t do that. Can you tell me the difference? Does the chicken come out more tender your way because the other way, the sealed chicken can have a “tougher” outside?
