Girl you just saved my life👏🏻😭 I been looking everywhere for this recipe!!! Everyone thinks restaurant oven baked are the traditional enchiladas & I love how hot & cold these one are & can only find them at the food trucks around me. I could never figure out how to do them myself. A person of my past, their family would put refried beans in them & put the shredded chicken on the top along with the rest of the stuff you showed which was also very good. These remind me very much of the way my moms used to make them. As a single parent of three boys KZbin has been a huge help in figuring out food to make for them since at first I could barely make them a sandwich. That's how we make them too, minus the chicken broth in the initial enchilada sauce. instead of broth, we use the hot water from the boiled chiles. Also, great recommendation for those who can't eat or don't like spicy taste. We add various chiles and boiled them with the tomatoes for the after sauce. I highly recommend making potato filling for the enchiladas if you want to make them vegetarian. Simply make mashed potatoes and use that for the filling.

I use to make My enchiladas with chile guajillo,chile pasilla,garlic,cloves,cumin,onion,oregano,marjoram,cinammon and Knorr tomate (tomato and chicken boullion). And I Also add onion and shredded Colby jack cheese to My shredded queso fresco.

Mexican here. We fry them first then bake to melt cheese and cook the onion inside a little. Then add crumbled queso fresco and all the fixings. PS it's not dry if you add enough sauce.

I would recommend taking the seeds out before you boil. easier to clean that way I do it under the faucet while the water is running by removing the stems with the seeds.

That's how I used to make my enchilada sauce until I smartened up. There is no reason to go through all the trouble of boiling and blending the chile pods. Just use powdered red chile and skip that part. Its just as good and you don't have to worry about the seeds.

Thanks for watching! If you want to make them spicy you can include dry Chile de árbol. Just follow the same steps and boil them with the guajillo chiles. Hope that helps!

Nice Vid! Wondering what the difference is in dipping then frying vs. frying then dipping as it pertains to taste, texture, and chili sauce adhesion?

So when you dip then fry, that sauce absorbs into the tortilla so the flavor is stronger...it's just really messy and I wanted to avoid that this time around. Sometimes if you're not careful the tortilla may break if you do it that way also.

Depends, this are more traditional, and enchiladas suizas, with green sauce, we baked those , but never use flour tortillas and cheddar cheese that’s a big no 👎🏼

Are these spicy at all? I wish I could tolerate spice and I just can't. My husband loves spicy food so I usually do foods that are mild and some that are extremely hot for him. These look so good and I wanna make them but I don't know if I can handle these if they're spicy.

With flautas, you put the chicken and roll it inside of the tortilla and then deep fry them. It’s like a hard shell rolled taquito. 😉

It’s so hard sometimes to watch the corn tortillas being fried then dipped into hot oil then home made sauce. I really think that style of doing it started in the 80’s. But in Mexico it was never made that way until it was brought over to America. You go to Mexico it’s always made traditionally. I’m not saying which one tastes better or what, but how it’s prepared

4:12 - I think, (99% sure) when you blend hot liquids in a blender, the heat from the liquid heats the air in the blender. As you are agitating the contents of the blender, including the air, the air heats up a lot quicker, causing pressure. As the liquid contents are being thrown around at the same time, anything near a sufficiently insufficient seal... whether liquid or not... will be expelled with force.

Honestly, I’ve never made green enchiladas, but you would make them with green tomatillos and Serrano peppers.

When you boiled your chili's devein and stems off blend with broth not the water with garlic onion salt to taste . No need for oil tortia go right into the sauce. .make sure you strain the sauce so you don't get peace of chili's
