Excellent tutorial! After making cannolis from 2-3 different recipes, yours (Lydia’s) is the best.....including the pasta machine method. I could never get the dough thin enough with a rolling pin. Thanks! PS - The pithy white on the orange peel is bitter. Removing as much pith as possible would improve the flavor.

This one is a saver. I watched many and this seems like one of the best. Only change I would do is get the metal tubes so they don't float because I would be using a cast iron frying pan to cook them. 👍🏻👍🏻

Just wondering if the shells are more or less tender using dowels instead of hollow tubes?

I can't get a consistent crispy shell. I made these. They have a crispness not also a oil softness feel. I tried peanut oil so 350, 375, 400F. On my Atlas I found that I need to go on number 6 which is a little thinner than 1/16 ". Setting 5 is over 1/16" and puffs up and remains soft. It will burn before it would be crispy. Setting 6 Only puffs up at the overlap where it is sealed. So that stays soft not crispy. There isn't much oil on the paper towels and that thin it only takes 30 to 40 seconds before they would get too dark/burn Any tips?
Does it matter what type of wood the dowel is? Can pine contaminate the food?

They were purchased from home depot , im not exactly sure what the wood is but if it is dry seasoned or dry to the touch you can wet season them in the hot oil for several minutes and you should be good to go.

Home Depot sells dowels three feet long, I cut them and seasoned in hot oil, they work perfect. My uncle (93) has his mother’s original made fro an old broom handle approximately 80 years old

I enjoyed that but I don’t have a pasta roller and I don’t have a fryer so I have to look up and see if I can find a recipe on how they used to make them back in the day when they didn’t have all these little gadgets My grandmother’s not around anymore but I’m sure I can find a video out there that did it the old-fashioned way

Lorrain Cassesso all you need to do is roll the dough out by hand and you can simply fry them on the stove top no problem

bowh... Thanks BUT you didn't say anything below as to where we get the ricotta empastada???????? I can't find it anywhere ?????????????????? There's no recipe below either :( I'm not using store-bought ricotta cheese, I've tried it and I tried it different ways, it's disgusting it's nothing like the cannolis you buy.

no just the shell was lydias recipe , we changed it very little by adding more cinnamon , the filling is our recipe

@@maryc7243 The wood will float so you have to keep them submerged by placing the strainer on top as seen in the video , to have an even cook , also I put the dowels in for a minute by themselves (no dough)to start to get them heated for the first batch , four shells at a time.

And after a few failed attempts at making them. Finally figured it out . I'll have to send you a picture of how they turn out.

You're right. The one thing I've found is regardless of the home recipe I try, they never turn out as good as bakery bought cannoli filling. I've searched for it at Restaurant Depot, etch because I'm sure the bakery buys it in 5 gallon buckets, not making their own everyday, but I failed so far. Surely some bakeries do make their own, but not all.

I am all about homemade and trying new recipes, but I tell ya, I usually buy them at an Italian bakery in Toronto when we visit the kids for 35 cents a shell and they are excellent. No problem you dont need it , you can kneed the dough just roll out the dough by hand and hand cut as we did and then you can mix the cream by hand , the pasta machine is not that expensive also .

To much cinnamon it will be to over powering. Should be just a hint of cinnamon. The wooden dowels are to narrow for proper cannoli shells they're also too short.

Yes you can adjust the cinnamon to your liking but this will make 90 to 100 shells so 1/100th of a tea spoon per shell is hardly over powering , and these are for the delicate small Cannoli's not the thick shelled large ones , come on now get with the program...!!
