Best tool to scrape out eggplants is a silicone spatula. And if you don't really like the taste of fresh garlic, wrap the garlic in alu foil and bake them together with the eggplants. No need to clean the cloves, they get soft and you can squeeze them out. Roasted garlic has a mild nutty taste, just lovely.

I am trying this right now! Just put the eggplant in the oven, I've made this for years but stopped because I was always disappointed by the appearance. The color would be too dark and unappealing. I usually buy a platter that comes with Falafel, baba ganoush, Hummus, Tabouli, Kibbeh, Stuffed grape leaves, and rice pilaf from the Lebanese restaurant near my house but my wallet has been going through some distress lately 😅 so I'm definitely gonna give it a go and make it from scratch at home. Just a fun variation that I like doing is roast a bulb of garlic coated with a little olive oil and wrapped in foil the use that instead of the raw. Raw garlic is great but roasted tends to be a little milder. Either way, you be you.
