Nice one dear; You didn't say anything about the stockfish preparation: I wash and soak with warm water to soften it; this is also important to eliminate some hard taste esp if your stockfish isn't fresh enough. It is also better to add your stockfish, smoked fish, and it's like early enough so as to cook well and also bring out the taste for an efficient result. I hope you find this helpful, well done!

If you had used garlic in Ofe Onugbo Ohaneze ndi Igbo would have come for you. After the onugbo, ogiri is the 2nd star of the dish.

Winnie, the best is fresh bitter leaf. And you don't need to wash off all the bitterness (taste). Thats why it's bitter leaf(ofe onugbu) soup.

eli san no I didn’t. The stock fish was already in really tiny bits and it was gong to get really soft quickly and I didn’t want it to get over cooked.

Hi Dear, you can use unripe plantain as a thickener for this soup. Just boil it till it is soft, then blend it till a smooth purée is formed. And I think you can also use the Ghanian cocoyam as well.

You can also use Quaker oats flour. The regular white oats we have in Nigeria. The pack/brand with an old white man's picture on it. Just use your dry blender/grinder to grind it to a smooth powdery consistency and use it instead of cocoa yam. Voilà, your onugbu soup is ready! Lol.

Please try buying unprocessed bitter leaf, wash it yourself and use, it takes not more than 20 minutes to get it ready. Trust me, you will never buy already washed bitter leaves.
