Hi dearie... You are a delight to watch but please try to get your facts right about any meal you will be preparing because food is a reflection of ones culture. 1. It is spelt "Edikang ikong". 2. It is geographically from the south south region of the country Nigeria not the south east. 3. The soup looks nice but in my opinion you just prepared an advanced version of efo-riro definitely not Edikang ikong. 4.The ratio is one cup of water leaf to two cups of pumpkin leaf. 5. Soup especially akwa-cross cuisine are usually boiled to maintain freshness especially with lots of sea food(for in stance I saw no periwinkles or shrimps in this meal). Finally onion is a must except you decided to add it to your beef stock and felt that was enough for the whole soup and the beef stock is compulsory to the soup. Please do confirm your recipes until then you are still a delight to watch..

Please Winnie, don’t say edikaikong doesn’t require onions. You can say ‘you’ don’t like it. As a matter of fact, I’ve eaten it severally prepared with onions and I enjoyed it. For me, there’s no edikaikong without onions fried in the palm oil. Cooking is a matter of individual preference. Thank you

For me, I fry a little onion in palm oil for Edikangikong soup. For Afang, I dont add onions. The onions come from the meat stock. That's what my mother taught me. However, I notice that every akwa ibom woman has her own way of cooking it.

After handling peppers, wash your hands immediately with one table spoon of salt. All i do is scrub the salt on my hands for about ten seconds, rinse it off and finally wash my hands with soap or a hand wash liquid. You will not feel anything afterwards.

Lool...for the pepper, I scrub my hands thoroughly with a lot of salt for about 10 seconds then I wash with hand was liquid and rinse with tap water...works like magic all the time and I am not a big fan of periwinkle.

Edikang ikong does require Onions. Try frying the onions and the peppers together. It's only Afang that doesn't require onions.

Edikang ikong is our soup. You are so wrong about several things including pronunciation. Even though people cook with preference there core things you don't miss out and that is onions and enough oil. In fact that name means fried vegetables. Meaning no water in the soup.

There is no doubt edikaikong is one of the best things that has emerged from the Nigerian traditional kitchen but there is a downside to it, It is capable of causing serious diarrhea. This largely due to the sliminess of the water leave. This can, however, be avoided if the water leave is thoroughly washed with hot water to remove the slimy bit.
