2:16 Agreed... Thick-cut, day-old (or at most, 2-day old) Challah bread (kept in a closed paper bag) has the best texture for making French toast, or any type of bread pudding.

Challah is eaten every shabat. It's part of the ritual dinner, every week. I think you might be confusing it with the round challah, which is only made during rosh hashanah to symbolise the beginning of a new cycle. Same recipe, different shape. Long challah is everyday bread.

The recipe provided is not exact replication of the video. Now I wonder if the ingredients are given in correct amounts. One of the discrepancies is that he said that the flour is the combination of all purpose flour and bred flour. However the recipe does not reflect that. That makes me think that the viewers will not be able to replicate the results.

Hi! I would describe the dough as elastic and smooth. It shouldn’t be wet but avoid adding too much flour. If it’s really sticky try kneading it more before adding flour. some stick is ok. You only have to let it rise once before braiding but it’s a good idea to let it rise for another 30 min after braiding. Good luck on your challah journey! :)
