Very useful information. Can you please share the nutritional difference between parboiled and brown rice? My mother is diabetic and loves dosas. 🙏👍❤️🔆

Namaskaram. Basically brown rice or white rice can be raw or parboiled. When rice with husk is boiled partially,dried and dehusked we get parboiled rice,where the nutrients from the husk enter the rice. Rice is dehusked and then sent to the mill for removal of bran partially or completely. If bran is removed completely,we get white polished rice. If partially removed,we get partial brown or red rice depending on colour of bran. If bran is retained completely,we get brown or red rice. Brown or red rice is also called unpolished rice Thus now unpolished brown rice can be raw or parboiled. For diabetics, brown or red unpolished rice is extremely healthy as it is rich in fibre and nutrients . Fibre lowers the glycemic index. Parboiled brown rice is much more nutritious as nutrients in the husk also enters the bran 😀😀🙏🙏. Regards Sujata from Munch and Mull

Awesome 👌 👏 👍 😍 tutorial on making dosa.❤❤❤. I have used blac wild rice to make dosa before and I really enjoyed the Krispy taste. I could eat dosa every day. Thank you for explaining the difference 🙏 ☺️ between the dosa batter and the idli batter. I've been using the dosa batter to make idli. Now I understand why it isn't so soft. I've been adding the salt after the after the batter is Fermented. I enjoyed the simplicity of it ☺️.

People vary batter using ratio of dal to rice from 1:3 to 1:4 and like you used 1:5 here. Can you please come up with a video or respond to this message explaining how does the ratio impact the batter and which one is good for what. Nice Video

Less of rice,makes dosa sticky For Idli,I use daal to rice ratio as 1 to 3,which makes idli softer. Also add soaked poha for idli batter. Regards Sujata from Munch and Mull

Every brown rice is different in texture. In general full bran rice need atleast 4 to 5 hours soaking in water. Discard water and then pressure with one rice to 3.5 water. cook it for about 3 whistles and 10 minutes on some. For partial brown rice, soaking not essential. One rice to three water, pressure cook for three whistles and then 5 minutes on sim flame. It requires a little trial and error to get it right with various different varieties of Brown unpolished rices. Regards Sujata from Munch and Mull 🙏

@@munchandmull Thank you. I am catching up 😀. We get brown sona masuri and brown basmati rice here in Seattle. We use brown basmati rice in our daily diet. We have stopped using white rice since 2019. What are the varieties of brown rice you are using? Also, I tried contacting Bio Basics (I sent an email). Unfortunately, I didn’t get a response. Will they be able to ship products to us in Seattle? We are super interested in their products.

If you could mark a copy of the mail you sent to Biobasics to me @ munchandmull@gmail.com, I could find out,why they have not responded to the mail.😊😊 Another alternative is that in case somebody is travelling from India to Seattle,they could carry a few Biobasics stuff for you, within the limited weight restrictions by flights😊😊. I use unpolished Rajamudi,Sona Masuri, Valliachanal, Raktashali, Mapillai sambha rice for regular use. Alternative them each day. For pulav, fried rice etc use, Unpolished Basmati, thuyamalli Fragrant variety, Kichdi Sambha. Plus generally use a lot of kodo millet too!! For rotis,I use, wheat,Ragi flour,rice flour,jowar,bajra alternatively. This mix gives a good balanced of nutrient dense carbs. 😀😀🙏🙏. Regards Sujata from Munch and Mull

Yes,red rice or unpolished rice has much of the bran intact,and so is nutrient rich. The bran also contributes to fibre and thus the glycemic index of unpolished rice is lower than white polished rice. This unpolished brown or red rice is good for Diabetics too!!! Hai mam. Thanks for the detailed recipe. I have a doubt. Do we use par boiled rice or raw rice for this recipe? In general this is not mentioned for any brown rice/millet available in the market and for normal dosas we usually make it with par boiled rice.

Thanks for this recipe, ma’am. I came across a video recently where a person was advocating against the use of brown rice or millets for making batter. His reason was that it has complex carbs (as against just starch in white rice) and that it does not ferment well, and thereby would cause digestive issues. May I know your take on this?

I have been using organic brown rice, for more than 7 years now. I have found it extremely healthy. Brown rice with its bran rich in fibre and essential vitamins lowers glycemic index, especially good for diabetics. It's good for everyone,as it helps detoxification due to fibre content. White rice is unhealthy for the body as it only contains starch. Thats my take on on use of brown rice. I would encourage use of brown rice and millets which are extremely healthy. Gm madam,inspired by the brown rice dosa recipe,prepared my own batter using 3cups of brown rice,1cup of urad dal and 1tsp of Fenugreek seeds,later prepared the batter and added salt,it rested for almost 9hours but has not doubled due to fermentation,could you please advice

The temperature also matters,if you are staying in a cold place. After grinding,mixing the batter well s very important. Try keeping the vessel in a warm water bath. Regards Sujata from Munch and Mull

It's a big problem can't get good quality brown rice. Whatever available in shop, when it's soaked the brown colour is washed away and become white rice. Thd recipe is excellent and clear presentation. Thank-you Sujata.

I would like to know in Rajmudi rice there are two varieties.one brown rice and the other one it seems to be half polished rice or what? Apart from that there is one more regular rice which is unpolished so called brown rice. Can you please clarify. Hoping from you.

Greetings from Australia Sujata! Thank you for this video which is indeed timely. As I've expressed in a previous video, I'm a diabetic and my husband suffers from high cholesterol. Not fun eh! We eat Dawat Gold, long grain basmati rice (yes, white) which is touted as being low GI and the best that money can buy where we are. I wonder if this is a merchandising ploy, especially after listening to you. I have tried cooking basmati brown rice but it didn't cook well. Perhaps I didn't add sufficient water or didn't cook it for sufficient time. So my experience hasn't been a good one and I've recently given away 5kg of brown rice to a friend. I've tasted other folk's brown rice and enjoyed the taste, hence there's got to be something off about my cooking the brown. Could you please help? 💞Fond regards, Gill 🦘🐨 Australia

Namaskaram Gill. Yes,Basmati white rice definitely is not fibre rich. I don't know if in Australia you could get Indian traditional brown rice varieties. Namaste Shalini. Basically unpolished rice with bran intact is called brown rice. Depending on bran colour,it could be brown or red rice. Bran is the outer fibre and nutrient rich cover of the rice grain, which is removed during polishing to get white rice. So basically brown rice comes in many varieties from different states of india! Rajamudi from Karnataka, Mapillai sambha from Tamilnadu, Valliachennal from Kerala, Indrayani from Maharashtra etc. Hope you got the idea. Regards Sujata from Munch and Mull 🙏😊

Minimum quantity will be about half a glass( a small steel coffee glass) of urad dal to two glasses of rice. This will make about 8 to 10 dosas. You can keep the batter in fridge and use it for about three times. The dosa will turn out so tasty that you may end up eating 4 instead of 2.☺️😀🙏. Regards Sujata from Munch and Mull

Namaste. Will plan an episode on this. If it's partial bran brown rice,then one rice to three to three and half cups of water and pressure cook for three whistles and then sim.flame for 5 minutes. If it's full bran brown rice, first the rice needs to be soaked in water for atleast three hours. Then rinse,add water and pressure cook as indicated before. Regards Sujata from Munch and Mull

They have a wonderful variety of traditional organic brown rice raw and parboiled varieties ,millets etc. There are many varieties like Rajamudi, Mapillai sambha,Sona Masuri, Valliachennal, Rakthashali, Poongar etc Full bran rice needs to be soaked for minimum 6 hours,whereas rice with partial bran,needs to be soaked for atleast two hours.
