I just had to get on here and make another comment. Since my comment day before yesterday I made Idli's for my dinner tonight. They were beautiful and perfect. I did as you instructed and used a cup of cooked rice instead of poha. I even got dressed for my dinner. I put on my lungi and a white cotton shirt. Only thing missing was my beautiful Tamilnadu family and a banana leaf. I have to admit I ate way too many with sambar and Melehai Puri. (Gun powder) and waddled from the table to the sofa. Had idli prepared with brown rice for breakfast. Whole family loved it. Had regular coconut chutney for accompaniment. The idlis looked hard on the outside, but soft when you munch on it. Feel good; will stick to this recipe from now on. Thank you. God bless!

Idli has become Brand of South India - like Taj Mahal for India - even though origin of idli is in Indonesia, as you indicated.There are research works on its suitability as a food that can be consumed even by the patients having severe heart ailments. But this is first time I am seeing this great food item crossing the racial barrier of apartheid ! Namaskaram. If the procedure has, been followed,as per video,there is no reason the batter not fermenting,unless the temperature is very cold. Give the batter a thorough mix and keep it covered with a thick Turkish towel,if you are staying at a cold place. Regards Sujata from Munch and Mull 🙏

I am so excited to find your channel. I look forward to watching many more videos. I am a 73-year-old man living alone on my very rural little farm in the mountains of East tennessee. I lived with the Indian family when I was in the Peace corps back in the early '70s. I lived in a village called Kabisthalam in the Thanjavur district in Tamilnadu. My host family were all terrific cooks. I loved the food so much. I have learned to cook many things that they taught me when living there. Of course I have been back to visit many times over the years. I must admit, that I have never ever mastered the idlies. I cheat and use an instant packet which tastes pretty good with a good sambar. I live so far from Indian groceries that I was wondering if I could substitute rolled oats or oatmeal instead of the poha? I can order the poha online but was wanting to try this. Let me know before I make a wasteful mess. This pandemic has caused the whole world so many problems. I want so bad to return to the village this year but it depends on my health and the pandemic status in India at that time. I love your sparkle and personality and I am looking forward to more and more videos. Please stay safe and healthy. Thanks again. (JoeMama)

I use various varieties of raw brown rice. Rajamudi, valliachennalu,Jyoti,Uma,Rakthashali, Mapillai sambha etc. You can get the link of Biobasics under the video. I order my organic groceries from Biobasics. A genuine source of organic groceries and traditional rice varieties. Unpolished Parboiled or puzhangal arisi is also available. This is a great recipe, mam. Now we get coarsely ground organic brown rice flour. Can we make really soft and fluffy Idlis using the flour? Also one could replace urad dal with sprouted whole urad to add more nutrition to the dish. Can you please share the recipe?

Mam excellent explanation like this video , but I have a doubt you told unpolished rice how come we know that polished or unpolished rice,we are getting rice in a plastic bag I think they are not mentioned anywhere this information

Namaskarams. Polished rice has no bran,so it will. be fully white in colour,whereas unpolished rice has some outer bran left and so has different shades of colour ranging from cream, light brown,dark brown to red, depending on various varieties. Namaskaram Vilasini. Brown rice can be raw rice or parboiled!!! You can choose whatever variety you want. Every variety of rice can be either raw or parboiled. Parboiled rice is called ukda chaval in Hindi. Hope it's clarified. White polished rice can be raw or parboiled. You should look for unpolished brown rice or red rice. Namaskaram . I have used organic unpolished raw red rice variety called Rajamudi. I source my Organic unpolished rices from Biobasics Coimbatore. Does the proportion change if we are grinding in a wet grinder? Usually we use the white rice and dal in the ratio of 4:1.

In wet grinder, urad daal gets more aerated,so quantity of urad daal used is less. So you can definitely try your proportion of 4 rice to 1 urad daal in wet grinder. Regards Sujata from Munch and Mull

Have not tried adding soya. You could instead try adding Moong daal in the same proportion as urad daal and add half a cup of soaked poha during grinding to get softer texture. Regards Sujata from Munch and Mull
