i lost my mom a few years ago and she was fresh off the boat korean. everything she made was so amazing and one of my biggest regrets is never learning how she made her korean food. i couldn’t help but cry watching this video, thank you!

10/10! This recipe came out better than most of the Korean restaurants I have eaten at. You provided some great tips that I had never tried like the kiwi as a tenderizer, partially freezing the meet to get thinner slices, and cooking in one pan then transferring to another to get them seared. This is my favorite bulgogi recipe so far. I never knew I could substitute Korean pear puree with an onion and it was delicious. My husband was so happy 😊 Also, thank you for the cooking tip of not crowding the pan. I cooked in smaller batches and the marinade was able to reduce into the beef making it not as broth-y.

I have found that using a Vegitable such as pear or kiwi to tenderize the meat makes it mushy. I prefer to use a better cut of beef such as ribeye and leave out the tenderizer. I believe most people resort to tenderizers just because they don’t have access or cannot afford high-quality meat.

Well, I appreciate the feedback - But in my experience, the meat turns mushy only if you use too much. Never more than 1/2 kiwi for 5 lbs of meat. If you use just the right amount, it comes out perfect. But of course, if you don't need to use a tenderizer then that's great.

My only concern is finding the right cut of meat to cook it, with beef i don't like when i can taste the over powering beefy/ irony taste if that makes sense. I bought some bulgogi marinate just in case i couldn't make my own due to finding the right type of ingredients . (very far from any korean market) Today i made some with beef i bought few weeks ago however the beef was more strong flavor. I will try the cuts you mention. Well, ribeye is the best cut but it should be cut thinly against the grain. You can also do sirloin or even flank steak cuts but again sliced thinly against the grain. If you don't like the beefy taste, you could briefly soak the meat in water or just rinse it to remove excess blood (which gives you the irony taste). Good luck!

Yes, half would be too much - my recipe says to use 2 Tbs pear for 1 lb beef. So do you want a side dish to pair with this bulgogi? You can make a few side dishes - like cucumber salad, potato salad or lettuce salad. You can probably find one from here - kimchimari.com/15-korean-salads/ Good luck!

Try 450 F for 10 min or so until they are nicely browned. I would also turn it over mid way to ensure even cooking. You can also use the broiler - I would check after 5 min to see doneness.

The key is to cut it against the grain so if cutting longer means it will go with the grain then you will end up with tougher meat. You may then want to grill a whole brisket (use my Kalbi marinade) or boneless short ribs and then slice that to serve?
