Makeitmake channel did apple preserving with Amish women and they used salt in water. I tried it and it does work. I used 1 tablespoon in 16qrt pot.

To freeze it, I'd treat it the same way you were freezing a jam. Use an airtight container or freezer bags and make sure you have complete closure before leaving in the freezer. Don't freeze more than 3 months for best freshness. The best freshness would probably be within the first 6 weeks, but it would still be a great way to prepare for holiday baking!
