Chicken korma, the mild, sweet and creamy curry house favourite is so easy to make at home. In this video, I walk you through the recipe step by step. There are so many ways you can taylor the recipe to your own personal preferences too. This recipe is from my red cookbook, "The Curry Guy" and will serve 1 - 2. INGREDIENTS
1 tbsp rapeseed oil
1 x 2.5cm (1 inch) cinnamon stick
3 cardamom pod - lightly smashed
1 tbsp garlic and ginger paste
1 tbsp ground almonds
1 tbsp coconut flour
1 tbsp sugar (more or less to taste)
Approx. 300ml (1 ¼ cup) base sauce
1 tsp garam masala
300- 400g cooked chicken
50g block coconut
1 tbsp butter
70ml (1/2 cup) single cream
½ tsp rose water
coriander to garnish (optional)
Salt to taste to season

Dear Dan, I made your Korma today for friends. Somehow i mixed up the large and the small batchs recipe of the base sauce and ended up with way too much Ginger Garlic paste. I stretched with water and reduced it down. The Korma was amazing! even with this mistake. Next time I do it right :) We will make your Chicken Pasanda next. Cant wait! hello Dan, Ive had my red book for a week and are loving reading it. Today I took the plunge making this chicken korma and basmati rice. Well the result was inbelivable. My oldest daugter of 29 goed often to an indian resturant here in the netherlands so she is quite critical. She loved it to bits. My grand daughter of 6 loved it as well. So no thinking of the next one to make.

Fantastic! Made it today, the base sauce is wonderful and I have enough for about 2 more curries! Thanks so much. Made the korma and it was delicious ! :) Bought the book the other day and I love it.

Have been in the kitchen today making a load of base sauce and then made a korma today from your book. It's my food bible! I got it as a Christmas present a few years ago and have used it to make many meals since. Thank you for helping me to make amazing BIR curries in my own home!

This is the best korma recipe ever! I've tried some in the past that were such a let down. But this along with your other recipes are fabulous! I found the rose water made it too sickly for me personally, that may be because I had a concentrated essense though. I'll add a bit less next time, but still tasted gorgeous!

Dan, can you demo the BIR chicken pasanda from your bible please? I've cooked a lot of your great curries successfully but I can't get that one right. Thanks

Actually I rescued it by using your other BIR recipes. Rapseed oil with cinnamon and green bruised cadomens, onion, ginger and garlic paste, a few green chillies, ground roasted cumin and coriander seeds, your mixed powder, paprika, turmeric. Then I gradually stirred in the padanda I made that wasn't nice on its own. Bang! Awesome result 😃

I'm not sure. I'm going home to California in February and will look for them. There are a lot of Indian shops in the area.

Omgosh been watching you cook curry for a long while didn’t realize you were a transplanted person like me. 👍 tell keef Brenda stopped by to say howdy and with the floriot children I have liked a decent curry but they moan first about smell than the taste because it’s too spicy 🤷‍♀️

Thank Brenda. I had the same problem with my kids. Started making mild curries and then serving with freshly chopped chillies at the table for me. :-

If I wanted to scale this up for 4 people, do I just double everything? Or should I be careful with some ingredients?

There isn't anything spicy in the recipe. Just double it. That is how the recipe is in my book. For four people. :-)

Interesting there's no mixed powder or curry powder.

All the spices are in the base gravy in the pan to the right. You bulk make the base gravy to use in whichever curry you are making at a later date.
