I have been looking for this kind of recipe for a long time. So glad I found yours. When ever we ate at the Olive garden, this is what I ordered. My best friends father was Italian. He came to visit my girlfriend from New York. That was the first time I tasted this dish and fell in love with this recipe. My whole family loves lot of gravy, so can I double the Marsala in order to have more gravy? I believe he served this dish with rice on the side. What do you use as a side dish? Its been a long time since I ate at Olive garden, because of the covid virus. For some reason I can not find Marsala in our stores. I surely don't want to order one bottle online. I would appreciate some help from you, about how to make more gravy and what to use as a side dish. I guess I could use noodles also. Thank you for sharing this recipe with us and I hope to get a respond from you. Gigi Hammer, a German born women living in Texas now. I'm not sure, but I thought you also use some heavy cream.

I love your videos Nonna and i'm going to try this chicken marsala recipe it looks delicious. I have a question when it comes to cooking with wine should you cook with a wine that you would like to drink or doesn't it matter seeing how your cooking it or is the wine that's used for cooking just a cooking wine? I'm not worried about this dish seeing how it's chicken marsala but some of your other dishes... Thank You keep doing your videos I love them...

I've viewed several Chicken Marsala recipes online, but I'm going to try your's Rossella. This one to me looks like the best overall. Plus, I really think you could have played the part of Mary in The Godfather III, well, had it been filmed now...otherwise you would have been just a tot! Hope the guys over at Pasta Grammar see these videos and change their view of Italian/American cooking. Yes, some of what’s happened here is too much especially with portion size and the addition of fats but as is seen here sometimes it is new and actually gives a delicious perspective of the possibilities when our culinary cultures mingle. After all I’m sure the Italian purists were appalled when the tomato was introduced to the national menu 500 years ago.

Every time I’ve ordered this dish in an Italian restaurant, it comes out all greasy with very little sauce. Swimming in grease though. I’ll make it at home from now on. It’s so easy.

I love trying world foods and this looks so good. But due to religious reasons, we do not use alcohol in food making. Although, alcohol do evaporate but i want to know if there is a non-alcoholic substitute for marsala wine?

Samrah Zainab Holland House makes a Marsala Cooking Wine. Could you use that? If not, use broth, but it won’t have the unique marsala flavor.

Rossella, your Marsala looks top-notch - would give anything to taste it. Say, by the way, have your ever uploaded a video of your making chicken saltimbocca? If not, would love to see one from you. My ideal saltimbocca is the version from Buca di Beppo, which features a lemon-butter sauce with capers and artichokes. Think you could see yer way, if you haven't yet, to making chicken saltimbocca one of these days?

why is it that i see so many recipes that add flour by just throwing it in but when i do it i get lumps? i stir it well but i can't seem to get rid of them so instead i dissolve the four in a little cold water first and add it. i would like to eliminate the extra dish to wash though. i can't wait to try this recipe.

If you're getting lumps try turning off the flame before adding the flour and stir it in with the residual heat of the pan. Serve as soon as it's incorporated. Sometimes stirring it too long over the flame after flour will dry it out too much and cause lumps!

i know this is an old comment but I wanted to chime in. you can just wisk the flour with a little bit of the sauce in a separate bowl and then add it to pan. you also need to let the flour cook so it will not taste like raw flour.

This dish doesn't call for garlic... it needs the sweet essence of shallots. Also increase the amount of marsala and chicken stock, giving us more sauce. Toast a big slice of Italian bread and serve by placing the chicken on top of that. Sprinkle with a teaspoon of finely chopped fresh parsley and...voila.

Its so hard to find a good chicken marsala. Everyone makes it so watery. I live in nj but drove up to long island ny a couple of times. they have hands down best chicken marsala ever!! It has bacon in it too!

The sauce reduction takes so much longer if not using that added flour you cheated with to thicken it. Most recipes for Marsala you will find don't use it as a thickener.
