Learn how to make Chicken Peri Peri with Chef Varun Inamdar. Chicken Peri Peri (or Piri Piri) is an African barbeque chicken recipe introduced in Africa by the Portuguese. It derives it’s name from the Peri Peri sauce.

Ingredients:-
1 kg Chicken
100 ml Extra Virgin olive oil
10 - 13 garlic cloves
5 ripe serrano chillies
10- 12 African devil red chillies
3 Bay leaves
1 tsp smoked paprika
Sea salt as required
1 lemon juice
Parsley
3-4 charcoal chunks
1 tbsp oil
Method:-
The Sauce:-
Take the devil red chillies, serrano chillies, bay leaves, garlic cloves, sea salt, extra virgin olive oil, smoked paprika and lemon juice in a grinder and make a fine paste.
The Marination:-
Cut the chicken into 8 pieces after removing the fat. Add the peri peri sauce to the chicken pieces and mix it properly.
Smoke Infusion:-
Take a few pieces of wood charcoal and place them on the gas burner and heat them till they are red. Take the burning charcoal pieces in a small bowl aand keep the bowl in the bowl of marinated chicken pieces. Pour some olive oil on the charcoals and as soon as they start emitting smoke cover the marination bowl with a lid. Let it smoke for 30 minutes.
The Barbeque:-
Heat a pan on moderate flame. Place the pieces of the marinated chicken in the pan and heat till brown.
Take some fresh parsley leaves and dab them in the marinade. Baste the pieces of chicken with the marinade. Keep turning the pieces of the chicken and make sure they are brown on all sides.
Turn off the flame and Chicken Peri Peri is ready to serve.

Am just a 12 years old boy and I got this recipe so easily that whenever am home alone with my 9 years old brother, there's always some extra raw chicken in the fridge. So, I always think about this Peri Peri Chicken and make it. My brother, mother, father says it tastes fabulous and really it is. They say it is really tasty for a 12 yr. old boy. OK here's my updates on this recipe. I made it Saturday evening & it marinated for 3 hours. I followed the recipe instructions & my wife who loves to eat at Nando's said this was amazing. I roasted ours in the oven, she says it tastes just like Nando's & next time I should cook it on the smoker. This was a great dish, thank you again.

Really good recipe. I can't believe how good it turned out. I couldn't find the chilli mentioned in the video so i got normal red chilli and dried red chilli to make the marinating sauce. The sauce didn't come as thick as shown in the video but the end result was still pretty great. I urge everyone to try it as the prep work is also very less.

I made it tonight. Delicious recipe. I could not bring that smokey flavor as I did not have any charcoal pieces. Like you as you used some lemon juice, I also could not be authentic as I added some green coriander stalks. It was absolutely perfect. Thanks you chef! You rock!

The peri peri marinated sauce you made sir there is no sugar to add? I haven't tried yet but I think that is super spicy right? And you just add a little salt just a pinch so what is the taste of that chicken?

I use this recipe and add some lemon zest.. I just fry garlic and chilli without using oil in a pan just to have it smoked.. love the recipe ❤️❤️

Thank you so much for your recipe! This recipe is my most favorite Pari chicken after all other tries. sometimes I add half cup of sugar to dilute the taste (Somehow Pari flavor is too strong for me). At first try, I fried it with oil but not really easy to manage so I just did as your guide! You can add a cup of hot oil with charcoal for a smoky flavor! Anyway this recipe is brilliant and wish you best luck!

definitely have to try this.....i will leave the skin on the chicken though....to me it is the best part of the chicken...crispy and tasty!!
