Nice video. Never heard of this dish before. One question remains: what happened to the other part of the egg mixture when making the dough?

It gets left out. Some people might need more of it if their mixture doesn't turn right yet, so they'll add a little bit more. I wouldn't want to waste it though, I'd try make an omelette with it 😂 Or just use less to make the mixture
