How To Make & Cook Turkish Shish Kebab
1kg Diced Lamb Shoulder or Leg (Mutton also works)
1.5-2 tbsp salt
1 diced onion
1 handful chopped mint
1 tbsp dry oregano
1/2 tbsp black pepper
1/4 lemon juice
1/4 cup vegetable oil

I was stationed at Incirlik AB for 3 years and loved these. They used to put what they called "Purple spice" on them which was wonderful. I still cant figure out what it was tho. Anyone know? Sumac maybe?

finally, a cross section of the product! great job, thank you! I made one recipe (with mince meat, I cant remember what, the names are all same to me), and I cook it in the oven. Meat was dry. Can you tell me how to cook it next time, pan maybe?

Hey brother, if you're doing it in a pan, you want to start off with a high heat and seal both sides of the meat, then lower the temperature. If you leave too long then all the juices will come out

and if I try again in the oven, do you recommend to turn on just the upper grill and seal the meat with regular turning? and than leave it on medium heat in the oven for maybe 10 min?

yes that would be fine, 10 minutes might be a bit excessive though

it will create a more intense flavour by doing that, but its your choice :) ive done it in the past. it works well like that if you are planning to cook straight away

Dear what would be marinating recipe if I'd like to use beef meat. I found few recipes on KZbin but weren't good enough as this look... please share if you have that too... thx... it turned out nice watching and making this one :-)

Muhammad Abubakar you can use beef with the same recipe, just make sure it's top sirloin.

Due open heat it it'd burn and change the flavor. He could have used garlic powder its syntetic so should not burn as easly.
