I always add butter at the end, and have issues with runny whites... basting JUST the whites is a tip I desperately needed.

I crack the egg shell, and then use the same shell to spread out the egg whites thinner so that they cook well and the edges are crispy brown. Works well without basting. I can't baste anyways as I use very little cooking oil.

@@DavidPietersen Welcome, I do this every day now and have it down to 4 minutes and 30 seconds where the entire bottom is crispy, not just the edges. The yolk is starting to congeal and thicken, but still runny enough to be tasty. Occasionally, if the oil become pooled in one small area of the pan, I will sprinkle a few drops on the edges of the egg that is not browning and within seconds the oil will heat up and nicely brown the edges that had no oil. Once I got to know my pan, my induction stove power etc - it is a repeatable act that takes almost no thought to get right.

This was literally THE ONLY way my grandmother (who raised me) would eat eggs. And they HAD to be brown eggs or else no go. I'll never forget one time that I was making eggs over easy, and I served her. She pushed them around the plate trying to, unsuccessfully, make me think she was eating them. Finally, I asked her what the problem was and she told me about the crispy edges.

a cool addition could be adding herbs to the butter/oil so that the aroma of the herbs gets absorbed by the fat. When you'll pour the fat on the eggs you'll actively season the eggs with the fat herb infuse.
