Serves: 8 to 10 about 30 to 35 Dholl Puri
Ingredient:
1. 3 lbs all purpose flour
2. 1 lb yellow split peas
3. 1 tsp turmeric powder
4. Salt to taste
5. 1 cup oil + about 1/2 cup to Brush
6. Pinch of yellow food color
7. Water as needed just to form a dough
Ingredients:
1. 3 lbs farine touts usage
2. 1 lb petit-pois jaune
3. 1 cuillere a cafè poudre saffron
4. Sel au goût
5. 1 tase d' huile + a peu pres demi tase
6. Un pince colorants alimentaires jaune
7. L'eau a besoin juste pour former la pate

Amazing! In the Caribbean, specifically in Trinidad they make dhal puri too. It is very close to how you are making it. They use the same split peas. The only difference is they don't put the food colour and the dhal looks more grainy and dry looking. Sometimes they add a little cumin powder to the dhal. Trinidadians love their dhal puri with their curries. Yours looks so yummy. I am going to try your recipe. I just love the similarities.

Thanks for the great recipe. I tried the dhol puri for the fist time it came out not too bad but a bit on the hard side. Now I understand why it required quite a bit of oil in order to keep it soft. Will try with a bit more oil next time...Thanks from Canada... thank you for taking the time to put up this video we Mauritians always miss the dhol puri.

Don't you add baking powder to the dough? All the recipe I've tried had baking powder but it came out like roti. I'm curious to try yours

Why did you use food coloring in the dough? Use the water from the dahl.

Because dholl is starchy and so flour when they both get together it's not good I used to use dholl water but not anymore

Hi dear thanks for watching I've used 1 cup (220 ml) of oil in the dough and you will need about 1/2 cup for brushing the dholl puri on the tawa

2y66 I'm from Mauritius live in Canada I just speak English because KZbin is international and I never add baking soda or baking powder in my Roti or dholl puri because if you do your dholl puri and roti will never stay soft the next day

Thank you for sharing this recipe and your little hints like too much flour makes a hard dal puri and you need to oil the entire surface. I’m going to try again cooking this Mauritian delicacy. My Mauritian mum did dal puri this way (only difference is she added cumin seeds - a matter of taste).

It is natural food colouring? That's my only concern. I see some people use the water from the boiled peas which I have tried and it had a really lovely colour.

It appears to be a lot but it equals three tablespoons of hardened shortening. Same difference. Chef’s preference. Oil or shortening (lard).

Hello there - just came across this video. I tried to make dholl puri in the past but the end result is too hard more like a farata than a soft dholl puri. After watching your video I concluded it may be because there was not enough oil in the dough - would you think that is the main reason too?

You should use the water from the dhal, add cumin /or fennel seed. Also I think you should cool the dhal after cooking, if you grind it hot it tends to be too soft, like mash, instead of flake. I wished I leant from my mama, she made the best!! Enjoy cooking..

Thanks for sharing with us dear I never add bicarbonate or baking powder to my dhal puri because it's already soft without it. And the dhal has to be warm to grind perfect and very fine and also I sometimes add cumin but never fennel

The best dal puri in Mauritius is from a seller named Dewa..check his videos on KZbin,then you’ll see how much oil he adds in his dal puri ..the more oily the dough the best the dal puri is .. It’s a street food by the way ,not really part of a healthy diet ..and this is what I eat everyday when I goes on holiday to Mauritius 🇲🇺

It’s called dal puri in Mauritius..not lentil puri or whatsoever lol Teach that to your kids in case one day they’ve got to visit Mauritius ,so that the dal puri sellers won’t take a pissed at them ..thank you 😉
