Just to let you know, the garlic sauce with the mayo is the white version on it if you want to make the real stuff you need to emulsify garlic and oil if you want it more authentic, you make sumac onions, no lettuce (same concept as a gyro) and Arabic Pita opens in the middle to put the toppings there and then rolling it

The only thing missing was dunking the lebanese bread into the drippings (after assembling the shawarma), then putting it on a low-heat pan, applying some weight to the top of the finished shawarma, so that the bread could also get golden brown and crispy and delicious. The rest of the criticisms you're getting are IMO taste-related (so there's no right or wrong) but as far as making the bread crispy, there's really no downside (other than having to wait for another 15 minutes).

just a tip, if you advice to not use supermarket garlic sauce then don't use store bought mayonnaise. Make it yourself or use yogurt instead.

Any Arab or Turkish watching this will laugh their ass off. There are many mistakes bro: the meat pieces should be round-shaped then pressed well, redundant pieces trimmed, the whole thing wraped up with cling film, put in the dridge to take form. Your garlic sauce is a mess 😂
