You would be surprised at how easy it is! But it is delicious. The extra liquid from the rice wine and often white soy sauce makes it less sticky. I make my tamago with a round cast-iron pan and cut the weird-looking ends off (they are smaller than the rest of the tamago roll). It just takes practice and a gentle hand. Like he said, if you make a mistake, you can fix it later. Just keep going until your tamago outside looks perfect.

Nah, you don't need the pan unless you're looking for perfect form. Just use a small normal pan and it tastes the same, just looks uglier.

I like salty scrambled eggs better than sweet. Add spring onion, or golden brown fried onion, cook until the egg get a little brown. The taste is addictive.

I made my own version of tamagoyaki once, but I used a normal pan (I don't own a tamagoyaki pan) and layered it with finely chopped veggies. It thankfully tasted good. I wish I could have authentic Japanese tamagoyaki, though

Hello, I have not written in some time, but I always enjoy your interesting channel. In Japan, you have a tv show that is called, “Midnight Diner” in English. The cook, a famous Japanese actor, Kaoru Kobayashi, runs a very small Tokyo restaurant that opens at midnight. He has many interesting customers who prefer his simple, honest food. One episode focused on his rolled egg omelette. He had the flat pan, like you. He mixed the eggs with his chopsticks, and gently added some to the pan, adding more as he rolled. I’d never seen anything like it. So simple and skilled. It looked absolutely delicious! I thought, if I am ever able to visit Japan, I need to learn how to politely ask for that omelette in Japanese, as well as so many other simply delicious looking foods.

I think dashi powder is fairly easy to find online. The next best thing is fish stock cube, which can be found in all supermarkets at least in UK. What I couldn't find anywhere is the square pan and this recipe in a standard round frying pan doesn't look as nice

Looks great man! I had no idea you could buy dashi powder. Haha. I usually make my own dashi stock, mainly for katsudon. There is a small Japanese grocery store near me that always has the kombu, and the katsuobushi.
