Wow! Those vinegars of yours look gorgeus! I just discovered your channel. For the first time I am making lilac vinegar. Today I picked some acacia flowers and that’s what I am going to use them for. I use this as a hair rinse. I live in a condo so I can't grow flowers, but a girl at work got so roses. I asked her when she was done with them if I could have them and I add some gardenias that where growing close by. I did add the mother from another vinegar. I use an old conditioner bottle and put 4 tablespoons of it and fill the rest with water. I love it. It makes my hair soft and easy to comb through. I won't use anything else!

I have been using my rose and chamomile vinegar for a few weeks now. I love the way it makes my hair feel. I decided to use chamomile because I have a mild case of seborrhea. Vinegar has always helped but I thought chamomile might be soothing. Plus I used to be a blonde!

Heidi, I started my first batch of floral vinegar over the weekend, but I also added some of the herbs you suggested for hair health, so I have rose petals, lavender flowers, yarrow flowers, rosemary, lemon thyme and lemon balm. I am very excited to see how it turns out! I also have some Pear vinegar going, inspired by your apple vinegar, as I had an abundance of pears that fell off my tree and bruised too much for us to want to eat.

I started doing this a couple years ago but not for vinegar as I now stir my vinegar daily for the first couple of weeks. No need for weights and no more issues with mold

Heidi, you are an awesome teacher! I have been dabbling in making vinegars, but I didn't know how to do it. It was happenstance I learned it. I harvest mugwort, lilac flowers, fir tips, madrone flowers, ginger, rose and mix, equal weights raw sugar, put in jar 58 percent full, cover with secured cloth, and in a week, strain liquid from solid, add double the amount of syrup in water and add to a jar with the plant solids in it and I always add a kombucha scoby, cover again and wait a month or so and then strain and bottle. You have added years of knowledge and happy trials. Thanks for putting it all together!

Thank you so very much for this video. When I asked this question of the "vendor" was told that each needed their own mother, chuckle. I think I tend to agree with your evaluation. And the mothered vinegar is a mystery for those that pay more. Again Mrs Rain for such a great job;

Hi Heidi. New start to the vinegar making year for me. Lol. I've got 2 gallon jars going. 1 is mostly various dried orange peels plus 2 whole apples that kids were going to eat but haven't. I quartered those and added them. The other is also dried orange peels with fresh sage & thyme and a single broken off nasturtium leaf. Trying to let those grow to big plants first but so far not there yet. As I'm using gallon jars and you used 1/2 gal I doubled the sugar. Hoping it works. 30 days before I can start rinsing my hair again. I can't wait.

Well, last night I commented on the rose-petal tea (the one where you mentioned different other spices). I picked the roses hoping to make sun-brewed rose-petal tea. Today we have no sun, and the high is going to be 69F. So, I'm going to pick some honeysuckle flowers, rinse them, add them to my jar with 1/4 C of sugar (like you show here), and I'm going to make vinegar instead. This will be my first attempt. I get so much hope and courage from the way you make things so simple. I'm going to pick some more roses and make a tea with boiled water, like you showed in that video I saw last night. Thank you so much, Heidi! I've watched MANY other ladies (at your suggestion) on this platform, but honestly, you're my favorite! God richly bless you (and Patrick), my sister!

Started a Rose, lavender, spearmint vinegar and a blood orange, lemon balm, lemon thyme and sage vinegar. Using the stir method has been working wonderfully and they both smell amazing so far.

Hi Sandi! This is an older video and I have since started stirring mine daily (just once a day) and though it is extra work, I am thrilled with the results. It just turns out so much better and there is no concern about mold on top. I also started adding more sugar making a stronger vinegar but it does take longer for it to finish. More like 6 weeks.

I just started a floral vinegar today (had to wait for roses to bloom and a good supply of franji pani topped off with lavender and calendula). It smells so heavenly already I can't wait for the 30 days to go by! My citrus vinegar is ready and I want to use that for cleaning but can't remember if I should remove the mother for cleaning or dilute it first. I had the blessing of catching 10 gallons of rain water here in Florida yesterday, ran it through cotton cloth but I don't know how to sanitize it for drinking. I hope it was ok to use for my floral vinegar for hair rinse or clothes wash rinse. Trying to catch up with all the know hows because I was never taught these things before. I am sooo grateful for all the hard work you put into getting this information out to us. I have a feeling we're all going to be needing this knowledge very soon.

If you have a SCOBY or a thick layer of sediment, it is best to strain these out before using for cleaning or it can leave streaks

I have long since changed to stirring daily or at least every other day. This not only prevents mold but keeps things stirred up and better aerated for a better ferment but a weight of some kind can be a good option if one tends to forget to stir daily

@@RainCountryHomestead Hi @Rain Country. Honestly I didn't expect a reply, lol. Incredible luck. Since I have you here, I was just trying to figure out an answer to my massive confusion, but was having difficulties searching the internet, so maybe you can help me. I'm currently making apple cider vinegar and vinegar from some fresh strawberries, both for the first time. I thought I'd give it a go for fun. For the apples, the gist I got from my research is that it is okay for the apple slices to float on the surface. I would just be expected to stir it 2 - 3 times daily, which is what I have been doing. I don't yet understand the science for as to why they SHOULDN'T be submerged. Do you know why? Also, for the strawberries. I honestly couldn't find anyone making vinegar out of them specifically. I just added my strawberries into a quart sized jar with some sugar and water and have been stirring it as often as the apple cider vinegar. Does the act of stirring the vinegar often ward off the possibility of mold the same as if everything was submerged? I added the smaller jar to weigh down the strawberries. I suppose from your comment, the weight isn't truly necessary if I keep on the stirring? If you could help shed some light on these questions, I would REALLY appreciate it. I don't really have anyone with knowledge about making vinegar in my life yet. THANK YOU!!!

@@TheCman5015PLPro Yes, the stirring is what prevents mold as you are not allowing the fruit to just sit for days on end unsubmerged. Mold cannot grow IN vinegar. It does not matter what fruit or herb you use, it is all pretty much the same and yes, no weight is needed if you stir daily

@@RainCountryHomestead This all makes me so curious. Thanks for clearing up that mold can't grow in vinegar. I don't know why but it hadn't occurred to me that something like that was a thing. I guess once vinegar has formed, I'm at home base pretty much. From what I've read, you can strain out the ingredients you used, and leave the vinegar out at room temperature for additional time undisturbed and a mother will form? I really appreciate your help me. Thanks again!

@Rain Country Hello! I was wonder if you could give me a little advice. It has been a month since I started my apple cider, strawberry, and floral (rose pedals, sage, etc) vinegars. I'm using the colored ph strips and all the vinegars are around the ph of 3.0 - 3.5 colors. I guess I'm wondering if there is a ph that I need to acquire for vinegar to be ready to use in salad dressing, sauces, etc. I was under the impression that I should be reaching for anywhere between 2.0 - 3.0 ph, but I'm finding that little has changed over 2 weeks since I got to this point. I'd love to hear what you shoot for. Also, does the ph number matter mainly for acidic taste? And is a 3.5 ph vinegar still useful? It's not going to hurt me if I hadn't gotten the ph to something lower? I probably sound a little silly right now. haha :D I appreciate your help!!

If we lived closer, I think I'd spend a lot of time at your house learning all I could. 😊 Thanks for teaching us Heidi! I've never made vinegar, but you almost have me convinced that I should. I don't have grape leaves so I'd have to use the smaller jar on top. Would I still need to cover the whole thing in fabric? Or is it snug enough that the second jar will suffice? Thanks again! ❤️

Thank you Amanda, yes, you would want to cover it still to keep the bugs out, the jar is to only weigh down your herbs and fruits so they stay submerged but you need to leave air space for the gases to be released. This will mean the bugs can get in so the cloth is to prevent that. Honestly, I do not always weigh down my fruits and herbs, if they mold on top, I just carefully lift the top layer out before straining. Anything below the surface is going to be just fine and the vinegar kills any molds.

Rain Country Thanks Heidi! I think I may try this with honeysuckles (that's what I currently have in bloom). Should smell amazing! Can't wait to get ahold of some fresh organic apples this Autumn! The vinegars should keep indefinitely right? I'd like to make enough ACV for a year so I don't have to purchase Braggs anymore.. Those dollars add up FAST!

Honeysuckle sounds wonderful! I have had some vinegars keep longer than others. The typical length for your homemade undistilled vinegar is going to be 6 mos to a year, sometimes longer. I really think it depends on the acidity of them. I usually burn through them pretty quick though so it is not an issue fo rme

Any flower that you know is edible can be used and is all a matter of choice. Nasturtiums would be a good one as they are good for hair but I think would also taste great in a salad dressing

Iv been washing my hair with baking soda and I spray Apple cider vinegar on my hair after I rinse the baking soda out. I don't rinse ACV out my hair has gained back it's natural color. When it dries there is no smell.

Though I am planning on making a vinegar with nasturtiums this year as they are also great for helping with hair growth, I have not tried it yet. Last year I did dry a LOT of the flowers though and have used them in my homemade shampoo and soaps. They are so delicate it does not take long to dry them

I do too, It's one of my favorite scents, they grow EVERYWHERE here in my area of Tenn. I'll definitely be trying it now. I tried to make Honeysuckle jelly last year but I didn't add near enough pectin, turned out more like Honeysuckle honey :P

I started orange peel vinegar and raisin vinegar. it's a few weeks old now. The orange peel vinegar is very cloudy, almost milky. Does that sound right?

Yes, mine does the same, the peels pretty much disintegrate and this is partly what gives it that appearance. Sometimes I have to strain mine through a cloth when it is done.

You can use either fresh or dry or both. If you are asking if you have to use flowers at all, not you don't, any homemade vinegar can make a good hair wash. When I run out of my floral vinegar, I use one of my fruit vinegars.

Are you asking if I put the mother in the batch I made in this video or in the dried herbs? In this video is the first time in my years of making vinegar that I actually added a mother from a previous batch, I have always had great results without taking the extra step, but tried it in the video just to see if I will end up with a different result

It is not always in the form of a glob, it can be just a thick but liquid substance that forms at the bottom of the bottle or jar. Though I have had a solid mass form at times as well, this usually happens with my apple, pear, or peach vinegars than any of my others.

Thank you for this video! 😊 I’ve tried making a floral vinegar. It was standing somewhere between 1 and 2 months. I noticed today it stopped fizzing when I checked, so I figured it’s ready and strained it in another jar. To double check I added small amount to some baking soda and strangely there was no fizzing action! I decided to taste a tiny bit of this vinegar and somehow it didn’t taste like vinegar or wasn’t acidic enough. Just like some floral water that’s a bit gone off. Does it mean this batch didn’t work? When I initially smelled it, it did remind me of vinegar. Have you ever experienced anything similar?

People often make the mistake that assuming that it has stopped fizzing, which typically happens at the two week mark, means that it is done but that is far from the case. That is only the first stage of converting sugars to alcohol but it still needs about another two weeks to allow the alcohol to convert to acetic acid. However in your case, since it was possibly done at the one month mark, allowing it to sit for another month still exposed to oxygen means that it probably "cleaned up" after itself and worked through all the acid so it is likely no good

I used daylilies for a flower vinegar. It's been a month as of yesterday so I think I will strain it off. This is my first batch of flower vinegar. Plan to use it as a hair rinse. Do you know if it will strip color out of hair if your hair is dyed? Just curious. I don’t know if you talk about this somewhere because I’ve seen most of your vinegar videos. I am finally at week 4. It stopped bubbling so is it done and ready to use? Also, I’ve had the cotton cloth on this whole time but noticed the water is kind of evaporating slowly, should/could I add more or is it too late? Thanks!!

O yes, I talk about it in many so you either have not seen those videos or missed those parts. Typically it stops bubbling at about 2 weeks. Once it stops bubbling this only means that it has mostly turned to alcohol and will need at least two more weeks to turn to vinegar. I never add water because it will just dilute the final product but you can if you want but I suggest waiting until it is done

I would love to try this, but the only type of flower I have access to is star jasmine. Do you know if star jasmine is ok to use? There are mixed things online about whether it is edible/medicinal or toxic/poisonous.

I just wanted to tell you that I made the flower vinegar. Two kinds. Both with rose petals - one with chamomile and one with lavender. I do have a question: Because they seemed to be making vinegar but slowly, I added a T of apple cider vinegar with mother to the jars. When I strained the flowers out, the vinegar smell was much stronger and a "mother" was growing in all the jars. I kept the 'mother" and put it in the next batch. So, will the mother work faster in the new batch and if I strain it out of the vinegar will it just grow another one?

I have tried adding a mother or vinegar scoby just to compare and have found no difference. While my herb vinegars rarely form a SCOBY, my fruit ones often do, especially the peach and apple.

I collect rain water for plants from my asphalt roof. I am hesitant to use it to make vinegar…..but I suppose it would suffice for a vinegar that wouldn’t be consumed internally?

I made some citrus peel vinegar a few months ago and it never smelled vinegary. I used a ph strip to test it and it was pretty acidic, but it smelled kind of funky and not what I was expecting. Do you have any insight into what I might have done?

Sometimes the kahm yeast and certain other factors can cause an odd smell but as long as it is vinegar, it can still be used for cleaning

I was wondering.....I have very thin and oily hair (skin too). Hair is actually falling out due to medicine I was on but have since stopped taking. When you use the vinegar you use it as just a rinse through week for the most part, is that right? I think we talked about it before. You wash weekly and rinse the rest. That's what I'd love to do to try and help my hair but will that manage the oiliness of my hair do you think? Any advice is appreciated. Thanks so much. I am not sure how well it would work for oily hair, you may want to consider trying the baking soda wash then vinegar rinse method. I know some with oily hair like that quite well. For my dry hair, the baking soda was just too harsh. I actually consider that I am washing my hair with the vinegar through the week. I do not always use the shampoo each week, I may go two weeks and just use the vinegar, it does a decent job cleaning my hair. :)

I have never tried it with vegetables but as long as you add sugar, there is not reason why it would not work. Carrot would likely be really good for using as a hair wash/rinse. I would personally still add some other herbs like sage and/or rosemary or some of the flowers I use here. as they are great for hair and skin and add a nice scent

Can the item used to make vinegar be frozen? For instance if I want to use apple cores can I freeze cores as we eat apples until I build up enough to thaw and use? Or is there an enzyme in the herb/fruit/flower that should not be frozen?

I actually tried this a couple of years ago and though initially it seemed it turned out ok, the weird thing was that vinegar lost all taste after a few months and developed mold on top and I had to toss it. Since I had always done well with the vinegar before that, I had to assume it was the freezing that did it.

I actually did start a batch of vinegar with frozen blackberries, I think they will likely work better since I did make a good fermentation starter out of some frozen ones, but the frozen apple peels failed me

If you were only using peels I wonder if that had something to do with it. We always eat our peels so I would be using cores. I probably won't try at this point but once I get a better feel for vinegars using fresh ingredients I might try freezing cores. Right now I'm having to much fun feeding the chickens the cores. We don't waist leftovers so they don't get a ton of scraps.

I started some yesterday with calendula, rose, lavender, and peony. It's not bubbling and I'm not sure if i should add more sugar. I used a half gallon jar and 1/4 c sugar. The calendula and lavender was dried and the rose and peonies were fresh.

The reason it is not bubbling is because it can take 3-5 days for it to bubble, however, I do recommend adding another 1/4 cup of sugar since you are only using herbs. I learned over the years I can get a better vinegar from herbs going up to a 1/2 cup of sugar per half gallon. 1/4 only for fruit vinegars

jaclyn Richmond use more vinegar rinse. The vinegar softens it & rids it of grease. Also after rinsing with vinegar final rinse is water.

I planted Marigolds this year instead of the Pot Marigold because I didn't know any better. I hadn't seen your video in time and I didn't know there was any difference. I want to make a floral vinegar to use on my hair. Is there any benefit to making a vinegar with Marigolds?

Great question Linda, marigolds do have their own medicinal benefits, though not as much as the calendula, they are still great. Since they are also helfpul with skin disorders, using it as a hair or skin wash could be quite beneficial One could even us marigold vinegar as the solvent in making an extract for coughs, colds, and flus with herbs like marshmallow, echinacea, and elderberry. This is just a thought based on what I know of those herbs - I am not a licensed herbalist, nutritionist, or naturopathic doctor.

Since I have not colored my hair since I was 20, I could not answer this so I looked it up but that was not entirely helpful as I found varying answers, however, most said it does not strip or bleach the color but it may change the shade. Some people said it did not change it at all. It may matter on the type and brand of color used but I really cannot say

Though I would not use it for most of the other things I use vinegar for, one could try it. The lavender would make the flavor too perfumy in my opinion. However, if you substituted the lavender with nasturtium flowers, you would have a tasty vinegar that would be both great for hair and food related preparations, I would think it should taste quite good on salad. I have considered trying this blend myself. Also, though I only use white vinegar for cleaning, one could try it for that and see how it works. I simply never have as I prize my homemade vinegars for their culinary, medicinal, and hair washing uses.

If you are just using it for your hair, yes it will be fine not to filter but I do not recommend consuming it.

No, it will not work because it is not a sugar. You need some kind of real sugar, you can use raw honey but even natural sweeteners that are not sugar will not work because there is nothing for the bacteria and yeast to feed on to convert to alcohol and then to acetic acid (vinegar)

Yes, if you do not mind the taste of lavender in your food. For cooking vinegars I use any of the ones I have made from fruit or fruit scraps. Banana peel vinegar makes a really good vinegar for cooking but of course so does apple, pear, mango. Or you can even make vinegar with garlic and oregano for using in more savory dishes.
