Looked good, don't know if you've tried it but if you haven't, replace the canola oil with sesame oil, gives a bit more asian taste going on in there and still keeps the sheen on the fish.

We used to go down to the pier and buy fish from a monger, but that was on the west coast. Try a good fish market, they usually have some. Occasionally, I get fish from an Oriental store that also sells fish, but be careful. There are a few things to check: does the store smell like the ocean or old fish? Do they have live fish, if so, do the tanks look clean and not too crowded? Is there good water circulation and filtration? Do the fish have any visible abnormalities like weird lumps or damage from other fish, or even visible parasites? Does the store look clean, especially behind the fish counter? This one might be just me, but are the bathrooms clean? I think you can figure out what to avoid on this list. Whatever you do, do NOT just pick up any package of fish that is not labeled "sushi grade". All other fish must be cooked. Good luck.

+Jessica Lazaro this depends on the type of cut you get from the tuna, leaner and therefore less fattier tuna will have less white fat in them causing them to look bright red. While the fattier cuts from tuna will have more fat in them causing them too look somewhat paler but they are usually much more tasty then the bright red one. You are comparing this cut of tuna you saw too the cuts they use in sushi restaurants i think which might be a bit confusing for people who dont have a lot of knowledge about fish or cooking in general. no offence tho ;)

Different types tuna-maguro, hamachi, yellowfin, tombo, etc.,-has different shades of red, resulting in different taste, texture & flavor profiles. If you have one, find local fishmonger that KNOWS his seafood, how it's caught, shipped & handled. There's HUGE difference!

This is not simple. Stop saying easy and simple. To people that don't cook this is too much. No one serves in a martini glass....You know what is simple:. Sushi Grade Tuna, sesame oil, sesame seeds, soy sauce, S&P, green onion, avocado. Toss that up in a bowl with some chips or some sushi rice....easy peasy.

This guy does not know what he is doing. Never canola oil. Sesame oil, just a little gives a bit of a smoky flavor, no bell peppers. Onion, garlic, shoyu which is soy sauce or ponzu sauce which is soy sauce with lime. Tuna should be cut into 1/2 - 3/4 size pieces spring onions chopped. That's it. We served our poke with cucumber and avocado on the side. You can mix it in with your poke, but then it's a California Poke. Not traditional.
