This vegetable is called by many names. However in Trinidad we call it Karailee. It is grown on a vine with a very rough outer look. Although it is bitter and not liked by many, it has a lot of health benefits and is known to be effective against cancer and treats high blood sugar level. It can be prepared in many different ways but today I will be showing you how to cook it very crispy with little oil and added saltfish/codfish.
