In this episode of In the Kitchen with Matt I will show you how to make fudge. This recipe for homemade fudge is really easy to make and only requires three ingredients! You can certainly add more ingredients but the basic fudge recipe only takes 3. Fudge is a perfect treat for the holidays or any time. It tastes amazing and super simple to make, if I can make it you can make it! Let's get started!

Ingredients:
1 can sweetened condensed milk (14 oz or 396 g)
1/4 cup unsalted butter (56 to 60 g)
2 1/4 cups of chocolate (milk chocolate, dark, semi-sweet, or a combination of them all, about 400 g)
Optional ingredients:
1 tsp vanilla extract
1/2 to 1 cup chopped walnuts
Tools:
Large Microwave Safe Bowl: amzn.to/2BKNwVy
spatula
spoon
parchment paper
kitchen spray (optional, helps to keep the parchment paper in the pan)
11x9 or 9x9 pan (depending on how thick you want your fudge)

Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to show you how to make Fudge, mmm yummy, love me some fudge. This fudge recipe is super easy to make, and only takes 3 ingredients, couldn’t be easier. One of my favorite treats to eat during the holidays is fudge, so here we go simple easy fudge recipe, if I can do it, you can do it, let’s get started. All right lets go ahead and take a large bowl, microwave safe, I am using a pyrex one, now we take one can of sweetened condensed milk, and this can is 14 ounces or 396 grams. Pour it in, use a spatula to get it all out. Now we take a quarter cup this is about 56 to 60 grams of butter, go ahead and put that in there. And now we are going to go ahead and heat this up in the microwave, until it gets really hot and the butter melts, umm I am going to do it for 2 to 3 minutes, it might, it will depend on your microwave, mine is a 1200 watt microwave, if you have an 1100 watt or 1000 watt it might take a little bit longer, just go ahead and start with 2 minutes and see how hot it gets we want it to be fairly hot, and the butter melted. All right now that our butter is melted, it took about 2 minutes and 15 seconds in my microwave. I am going to go ahead and add my chocolate, now you can use all milk chocolate, or you could use all semi-sweet, or all dark chocolate, but you can do like I said, you can do whatever combination that you want, it will be awesome. Let’s go ahead and pour that in there, and then we are just going to let this sit for a moment in our mixture, just let it sit for about 3 or 4 minutes, and then we are going to stir it all together. All right once we have given our chocolate a chance to sit there in the hot condensed milk we are going to go ahead and start stirring it around, now if you want to add more ingredients, you certainly can, at this stage you can add nuts, like walnuts, and you can add um vanilla extract if you like. All right I am loving this consistency right there, that is exactly what you want it to be like, it is like a really really thick frosting. All right, and now, let’s go ahead and take, this is an 8 by 11 glass pan, or you can use a metal one, 9 by 9, whatever shape that you want to do, and what I did is a took some parchment paper or baking paper in here, and to get it to stay on the bottom, optionally I just sprayed it with some kitchen spray, and it helps it to stick. Let’s go ahead and pour this all in there, and you want to work fairly quickly it is not super necessary, to um like rush, but you do want to work fairly quickly, because it cools down pretty quick, get it all in there, and then just go ahead and spread it out...

I wonder why fudge sells for $16. a pound! A person could buy terrific steaks for that price; yet it costs so very little to make.

Yes this particular fudge recipe doesn't cost much at all to make. But the traditional fudge takes more ingredients and it takes more time to make, so I can certainly see why it costs more. mmmm steak....lol :)

in the EU fudge cost about 9 euro per kilogram the following recipe makes about 800 grams. chocolate cost 50ct per 100 gram condensed milk cost 2 euro per 400gram. you need 4 packs of chocolate and 1 can of condensed milk which is about 4-5 euro. this its just about half of the cost of a regular pack of fudge. but the difference is that store bought can be kept longer after opening/making it. due preservatives inside the fudge

Well, it's a lot of work to do, and people somehow like to get paid for the work they do. "...yet it costs so very little to make." Let's try this argument with our hairdressers next time. They already had the chair and the scissors and the comb, 2 - 3 liters of water, a dollop of shampoo and a bit of hair product cost so very little, yet they charge us, what, 20 bucks. 😄

I sell mine for $2 each. I have four in each bag. I either use cellophane bags or snap lock bags. I make a white chocolate one with oreos. A dark chocolate one with nuts and another dark chocolate one with oreos

I tried it. Turned out great, it's tasty but it doesn't seem to settle into very hard blocks. Wonder why?

I leave mine to set overnight. Sometimes 2-3 hours isn't enough to set so if you leave it in the fridge to set overnight it should be perfect and I recommend not putting butter in your fudge. I tried it, it was great but not that good But without butter its delicious. Also its a great product to sell. People love it and they will buy it also if you sell it, by the end of the year you'll probably be rich. I just finished selling it today and after 1 hour or two I got a $112 in just one hour and I'm only 14 years old

Also if you leave them out for too long like if its near the sun or just sitting on the bench its most likely to melt and it won't stay in a hard consistency. You can leave it in the fridge or freezer

Delicious! I chop it up and use a small amount in my vanilla smoothies with pb. It’s like a lower cal version of moose tracks 🤗

Thanks for the recipe! We're currently under quarantine due to the Coronavirus and needed a good pick me up. I used butterscotch instead of chocolate and added a little vanilla and cinnamon. It came out perfect!

I made a batch of this last week, following your recipe. No microwave safe bowl so I heated in a pot on the stove over low heat. Worked perfectly and the fudge was delicious! Will be making another batch soon for holiday gifts!

Just confirming did you heat the condensed milk directly in a bowl on low heat or did you double boil, if directly, will there be chances of the base getting brown on account of the heat,

​@@Larry-qf7lw I heated it directly in the pot with the butter. I scraped the bottom with a silicone spatula a few times throughout to prevent any chance of burning or browning.

@@Larry-qf7lw Np! I didn't time it, just watched and moved the butter around until it fully melted and then about 2-3 minutes after that. I would say around 10-15 minutes total time on the heat.

There's a few tricks when making fudge and a big one is not to make it when it's humid, raining or even drizzling, those all affect the setting of fudge.

I wonder if you could make the peanut butter fudge using this same technique? Instead of using Chocolate you'd use the peanut butter chips? And since I've already tried your chocolate fudge using this technique, Plus some walnuts. I'm gonna try the Reese's Peanut Butter Chips. Oh and also I've found that adding a tablespoon of marshmallow cream to your recipe will help as well. Thank you for sharing this video

I made it and it's good. I used a pot to make it in on the stove stirring it on low until the chocolate melted. I don't like using the microwave if I don't need to. I used 2 100 gram chocolate bars one dark chocolate and one milk chocolate so that was 200 grams total for those then used 200 grams total of chocolate chips. Turned out really good. So easy and so yummy and now that i've made it I won't buy it for a hiked up price no more don't need to LOL Thanks for sharing, great video!!

Yes Matt this is the recipe but I do not have a microwave but a heavy bottomed stainless steel pan, can you guide me how I should go about. You have only kept the stuff in the micro and then it gets hot for you to proceed, can I make the same in my heavy bottomed stainless steel vessel and how long should I stir the condensed milk butter etc. then I put the chocolate, I am only using the dark chocolate, how many grams is it, then I proceed like you did. Please Matt please guide me because I want the outcome to be as good as yours. Thank you

Yes you can do it in a heavy bottomed steel pan. Add the chocolate (400g) to a mixing bowl. Heat up the sweetened condensed milk and the butter until it is really hot but not boiling. And make sure to keep stirring it so it doesn't burn. Then pour that over the chocolate. Let it sit for a few minutes then stir until the chocolate is completely melted. Then pour it into a pan lined with parchment paper.

Why is mine so sticky! Everything I make is to sticky!!! I did that exact thing, I took the sweetened condensed milk and a shredded bar of mildly sweet chocolate, mixed it in, heated it up, mixed it, put it in the ready pan with the paper under it, but it’s just so sticky! How can I fix this??

You only used one bar of chocolate? You need to make sure you use the right amount of chocolate. 2 and 1/4 cups total of chocolate. Heat the sweetened condensed milk up first really hot, as I showed in the video. So no you didn't do the exact thing if you combined the chocolate and milk first.

Thanks! 400g or about 2 1/4 cups of chocolate :) That can be a combination of chocolate chips and broken up chocolate bars or all of one or the other.

Hello, it will be okay for awhile at room temperature depending on how warm it is. I usually just store it in the fridge. But keep it in an airtight container, and if it is not too warm in the house then it will keep fine at room temp. :)

Can you use regular Hershey Chocolate bar? I tried fudge from a different recipe yesterday using Hershey chocolate bars and it never set. I have enough to try again and wondered if it was the recipe so I thought I might try this one. But then I wondered if it's because I used that kind of chocolate.

Just FYI: This recipe doesn’t thicken unless you use 6oz condensed milk and 3cups chocolate, 1/4 cup butter. Otherwise, if you use 14oz milk, it will NEVER thicken. You’re welcome!😉

I am going to use my thick stainless steel pan and proceed with cooking the condensed milk and butter on a medium flame till the butter melts and then off the flame will stir in the chocolate and I will add a few walnut pieces cut into small pcs. All this I will keep ready with the tin greased and lined to empty the contents as soon as it is well mixed.

*heavy sigh* "If I can do it, you can do it." WELL I CAN'T! You make it look so easy! That is a different method than that which I was taught, and looks far quicker and less complicated, so I'll give it yet another go. But I can leave mine in the fridge for 9 hours, and it still never sets. I'd never eat it myself 'shudders,' But it will be a lovely addition to the Christmas fare I'm preparing for my guests this year. Thank you; perhaps this time will be more successful for me. 'Takes a deep breath' and prepares for yet another try...

Oh yes, I'm definitely gonna try it out. I'll have to wait until Saturday, as a quick reconnaissance of my store room shows no sign of any chocolate (used the last of it on your Rolo recipe). I will certainly let you know how it turns out. The recipes of yours that I have copied so far, have turned out fine. Just follow this recipe and melt the marshmallows when heating up the sweetened condensed milk. set it for 30 seconds on high, then stir then 30 seconds, stir, until the sweetened condensed milk is hot and the marshmallows are all melted.

Thanks! All the ingredients and amounts are listed in the description box. If you are on a mobile there is a triangle under the video on the right side that you press to reveal the description box. Of on a computer just scroll down to under the video and select "show more". On the screen of the video it does say 400g at 1:42 in the video. On your packages of chocolate chips it will list the grams as well as the ounces. It is about 2 1/4 cups worth of chocolate chips.

Matt i just looked at your cinnamon roll video (your most popular video) and i noticed that your popular videos have a lot more dislikes than your other videos

That is very true but that is because of the sure volume of people watching. The actual percentage of likes to dislikes is still around the same across the videos. :) For example the cinnamon roll one has something like 460 dislikes, which may seem like a lot, but it also has 13000 likes. which is a 96.6 like ratio, which is not bad at all! lol :)

Matt 13000 divided by 460 equals 28.2 that is your like ratio on the cinnamon rolls video vs this video with 56 like ratio what I'm saying is when you make a popular video is is great for your channel because along comes new viewers but what also comes along are haters but it is nothing bad about it because some of the new viewers become subscribers and and they watch and like your other videos (i came from the cinnamon rolls video)

That is not how you you find the percentage though. :) you have to divide 460 by 13000 to find the ratio which is 3.5%, meaning of the people who clicked like or dislike 3.5% didn't like it, and 96.5% did like it. :) And I am totally ok with people who don't like my videos, haha, some might like one video of mine and not another one, which is great! And yes you are right, the more popular videos bring in more subscribers which is awesome! So glad you came to my channel! from that video :) Also the cinnamon roll video has been around for a couple years now, this fudge video only a few days and has 100% likes (58 likes and 0 dislikes so far, but that will change as more people watch it), haha the like ratio in a couple years for this one will resemble more closely the one with the cinnamon rolls.

You can certainly give it a try. :) I normally don't do it this way, it is a little too easy to burn the chocolate. But if you do it in bursts of 30 seconds and stirring in between, it will probably be okay.

What a wonderful recipe Matt. There are so many things people can add to it to make their own unique recipe too. One of the most unusual ingredients I have see was maraschino cherries that were drained well. Sort of tasted like a home made chocolate covered cherry.

@@projecthiraeon mmm that is weird. That never happens to me. It always firms up. One possible reason why it didn't set is maybe it wasn't heated up to a high enough temp. You can always try reheating it and then try an let it set again. Or you can use it as a topping on ice cream or something. Also are you absolutely sure you used sweetened condensed milk and not evaporated milk? Evaporated milk won't work. Sometimes the cans look very similar. haha

One more Q Matt hope you are not already mad with me, but just wanted to know when once put into the dish I plan, can I take a round mould grease lightly with butter and spread the chocolate evenly so that I can a nice smooth top, I need your advice, thank you thank you, God bless you

Well, so far so good. :) I made a double batch with walnuts for a neighborhood get together tonight. Taste test is positive, firmed up quickly. Never made fudge before so this is a first. Thanks for sharing! :)

How do I keep it please? In the fridge or not necessary? And how long does it last ? Merci

It will last 2 to 3 weeks in the fridge. You can also store it at room temperature as long as it isn't too warm in your house. Add it do an airtight container and add a layer of fudge then a small piece of parchment paper, then another layer of fudge on top of that, etc. :)

This is the fudge I was talking about few ingredients and indeed I watched other videos and now I feel confident. Only where you have said 396 grams of condensed milk my condensed milk is only 380 grams, chocolate is ok and butter also is ok. Can I follow the recipe or you suggest lessening of the other ingredients to match the less condensed milk. I know I am bothering you too much but looking at you such a cool person and so ready to reach out I do not feel bad and for this I say a big thank you. God bless you Matt
