Hey man, last year I was going through a really rough time with mental illness/drugs. I've seen some of your videos lately as I've been trying to get into cooking to be a more "responsible" adult with their **** together. You've helped me a lot through a difficult time period and helped me find a new passion in life even if I'm just beginning. Thank you John for being a shining light. You have a wonderful personality and wonderful recipes that are easy and fun to make.

Hey there, stopped to say congrats on building a healthy lifestyle. I live with mental illness too. We've got to talk about it... Normalize it in society. The holidays can be tough. I'm glad you are doing something for yourself learning a new hobby. I got into sugar cookies last year watching John's videos. Never give up friend. Best wishes on your 2024! 🙂

Speaking of nostalgia, I learned to make fudge this way in the 7th grade. I went home with a friend one day after school and his mother had the milk and chocolate ready. The chocolate was a big hunk of semisweet cut from a massive bar at the grocery store. We made a big pan together, under close supervision of course. After homework and a fat BLT sandwich, we got to sample it. I am 75 years old and still make this occasionally.

I have made the fudge recipe for years. I used to be a school nurse in a high school and I would make this with my kiddos in special education. They would take it home as a gift for their families.

For Canadians with different measurements: (1) 225g bar of unsweetened (1) 225g bar of semisweet (2) 300g can of sweetened condensed milk This is the ratio I use and it turns out perfect, just make sure the unsweetened chocolate is chopped finely

Super easy and delicious! I use semi-sweet mini chips, a dash of Espresso, a tiny dash of Cayenne... a teaspoon of good Vanilla Extract... but for the Sweetened condensed milk I use either the Dulce de Leche version OR (if you're near a Russian store) the Bandi Caramel Sweetened Condensed Milk. Adds a magnificent flavour... SO fast, SO easy, but people think you're a wizard!!!

I’ve made this fudge for years. I add a pinch of salt and a little vanilla to the basic fudge then make different variations. Heath toffee bits, almonds and mini marshmallows for rocky road, or, my personal favorite, melted caramel swirled with the chocolate as it is poured into the pan.

I've made this for years, though always with good semi-sweet chocolate chips. Two of the favorite flavor variants that my family loves the most are Amaretto and Baileys flavored fudge. Flavor heaven! Rum fudge is probably 3rd place. If you are going to use rum, best to use a dark rum such as Myers. Also I've always used a double-boiler to melt the chocolate with the sweetened condensed milk. Was always told the steamed water was a little bit better of a safety barrier than direct flame or electric burner.

Definitely watch your fingers when chopping chocolate! When my sister and I were in middle school, Mom told us to make some almond bark. Since this was in the ancient days of the 1970s, we only had a huge block of white chocolate and the double boiler, so we split up the block and both went to work, chopping side by side. Sis finished before me and reached out with her knife to help me finish. She sliced the tops of my index and middle fingers on my left hand. I still have those scars.

Even I can do this, and that's saying a lot! I put the burner on the lowest setting. Eventually it is one big gloppy mass -- that's when it's time to transfer to your 8x8 or whatever form you're using. Near the end I added 2 cups of finely chopped walnuts, 1 tbsp of brown sugar, and 5 finely chopped Ghirardelli white chocolate balls. Then once in the 8x8, and all smoothed, I sprinkled 1/ 2 cup of finely chopped walnuts on the top. Perfect texture and taste. 2 hours set up very well.

You should try to make brigadeiros someday. It's basically this same fudge, but with a different chocolate:condensed milk ratio, wich gives it a much creamier texture. Traditionally, it's served in the form of small balls covered in sprinkles, but if you let it cook just long enough (not until it can retain its ball shape), it's also perfect to use as a frosting for cakes - especially for Brazilian carrot cake, which is very different from the American one.

Fudge has always been my 'go-to' confectionary of choice over any other since I was a child. (I have always liked fudge, toffee and caramel tasting types of confectionary hence the liking of fudge. We know that sugar is one of the main ingredients, hence so many examples in stores or marketed has 'handmade' or "exclusive quality fudge" etc, seem to fail. (including those fudge makers who make it on site in front of you and that which is sold in exclusive stores etc). In the years of occasionally treating myself I have only ever found 4 fudge makers that have mastered this incredibly difficult taste balance. Two being handmade in and two being what fudge makers call 'processed fudge' (ironically be better to the majority that claim to be 'original, handmade or with top quality ingredients". Has said, to get a fudge that 'traditionally' contains so much sugar yet does not taste overly sweet or sickly is quite a difficult achievement
