I'm gon make gunkan-maki (tobiko) for dinner tonight. I was sorta unaware about the length of the nori for this, but I sorta just eyeball it and yeah... I make it do what it do. Thanks for this video.

I've always added a piece of rice on that tag of nori and then just pressed it against the nori it was overlapping. It holds up well like that. Is that OK to continue doing?

Dan Gracia That works. There are many chefs actually do so. It just depends on your preference and the business style. Fast-paced restaurants that need to serve hundreds of pieces of sushi, adding a grain of rice on each piece may not be a good idea.

In gukan we don't add wasabi?

It is still ok to add wasabi if it matches the flavor. Most sushi restaurants, especially in conveyer-belts type, gunkan sushi is served without wasabi. This is simply because gunkan is usually more popular among kids and women. If you like wasabi however, you can order so, and chef will add some for you with no problem.
